I love pasta. Love it! And while this recipe is not the healthiest one out there, it sure is delicious! Sometimes when I make fettuccine alfredo, the sauce doesn’t turn out quite perfect if I am just throwing stuff together. It seems when I measure out the exact amounts below though, it is perfect every time!
If you are trying to be good and want a lighter/skinnier version, you can do that here.
What You Need
1 Package of Whole Wheat Fettuccine or Linguine Noodles
2 shredded chicken breasts (I use the breasts from a rotisserie chicken (#lazy) or you could boil two chicken breasts)
1 cup of heavy cream
1 stick of butter
2 cups of grated cheese (I prefer Italian blend)
pepper to taste
What You Do
1. Cook noodles according to package
2. In a saucepan over medium heat, warm the butter and cream and season with pepper.
3. Add the shredded chicken to the sauce mix to warm up.
4. Place one cup of the cheese in a bottom of a bowl.
5. Add noodles to the bowl.
6. Pour sauce/chicken mixture over the noodles.
7. Toss and add the rest of the cheese.
Serve immediately! This one tends to get cool quickly.
I like to add a little crushed red pepper to mine to spice it up, but Chris likes his without.
Well hey there friends! Perhaps you noticed that things have changed a bit around these parts!? I am still working on changing the profile pic/blurb, maybe adding a new button, and things like that but I think this was a good start! (PS- I know there are two i’s in the word life, I need to get it fixed!)
I had been itching for several months to change up the layout and I finally sat down Sunday morning and made myself do it! I love the new social media icons and the Instagram plugin that runs along the bottom! Which reminds me…Are we following each other on social media? We need to be! If I see anyone adding me, I will add back. I sort of dropped the ball on adding some people when I started following their blogs.
This weekend was a good one! Friday night we kept it chill and stayed in. We caught up on some shows that started back this week. Who else is excited to have new episodes?!
Saturday morning I cleaned the house and then we headed out to run some errands. We weren’t really sure what we wanted for lunch so we headed to our usual spot, World of Beer! Duh! I know what you are thinking…Nadine you are on a 21 day detox cleanse. Yeah, about that. It wasn’t working for me. I decided to change it up and am just going to use my plate to track calories and allow one or two fun meals on the weekend. That was my main problem anyways. I ate pretty damn well during the week, I just needed a portion wake up call and tracking is the best way to keep that in check!
Saturday was also the five year anniversary of the day we met! It’s hard to believe it has already been five years…yet I can’t believe it has only been five years because I feel like I have known Chris forever. Look at how young we were! (sorry for the blurry image, this was taken with the original iPhone or something back in 2010!)
Sunday was all about getting stuff done for the blog, MCB, and meal planning. I woke up around 6:00 am and hit the ground running. I got things put into my planner, some post ideas started, catching up on emails, this new template installed, etc. I just love when I am productive early on in the day! It makes being lazy later quite OK in my book!
Other happies for the weekend would be my nephew Christopher scoring 3 points in his first basketball game!! His team won 12 – 11!!!! I can’t wait to go some of his games this season.

The theme for the choose your own adventure challenge for the month of December was Simplify. I had a few ideas in mind for this challenge and since the theme was simplify, I kept them simple!
I wanted to focus more on living in the moment and keeping the phone away when I was in the presence of others. I did that for the most part this last month and will continue to do so in the future.
I also planned to discard things that are no longer of use. Unfollow blogs that I mark as read every day without even opening the link. Delete pins that I see on my boards that I never plan to use. Donate the remaining clothes that I have sitting around that I will never wear again. Clean out folders on my computer. Delete apps that I have never opened on my phone.
I did all of that! I still have another area in our house where I need to go through clothes, but I got rid of a lot. The Pinterest boards will be a work in progress because I seriously have a lot!
The theme this month is complete. Sounds like it was made for me. There are a lot of things on my seasonal goals list that keep getting carried over. This is the month that I need to do something about it!!!
1. Make eye doctor appointment
2. Finish cleaning out the dog room/my office
3. Gather research on plants that purify the air inside the home
4. Gather information and start planning spring garden
5. Purchase at least two things for the gallery wall

Have you heard that the confessions link up is back with Melissa?! I know…I am just as excited as you about this revelation! For me, it never really left. I couldn’t let go. Now I don’t have to! So go link up with my girl Melissa and get to spilling all of the things!
–Today is day three of my 21 day detox food challenge. No sugar. No alcohol. No dairy. No white flour anything. My biggest revelation? I miss cheese. Bad. Shocker, huh? I don’t even know if I care to hold out for the 21 days with the dairy. I have a feeling I will be giving in on the cheese.
–You know what really irritates me lately? Facebook. Another shocker, right? It’s really annoying for a lot of reasons, but the biggest thing that pisses me off? The comments from idiots. Why in the hell are you being an asshole to someone on a community page for reasons that have nothing to do with the topic posted? Why are you turning everything into a race war on news sites? Why can’t you just keep your damn mouth shut if you having nothing nice to say?
–Along those lines, shaming (fat or skinny) is something I have zero tolerance for. Have you ever followed along with Mama Laughlin? To be honest with you, she is one of the reasons I started blogging. I found her on Pinterest one day and clicking on her link introduced me to the world of blogging. She has been through an incredible weight loss journey and did it over time the healthy way. She tried different things that worked for her, changed things up as time went on and she looks damn incredible these days! I follow her on Instagram and Facebook and she posted a transformation picture of her from a few years ago and now.
The first comment I saw was some girl blasting ML for posting such a picture. Trying to shame her for being proud of how far she has come and being happy with how she looks now versus where she was two years ago. Um….why did this person feel the need to do that? Why does anyone feel the need to fat shame or skinny shame someone?!?! Why cant people let others be happy with their progress? I was just enraged as I sat there looking at her comment thinking about how it would make me feel if someone tried to make me feel bad for all my hard work. This has became a rant….but seriously….WOMEN STOP BRINGING OTHER WOMEN DOWN TO MAKE YOURSELVES FEEL BETTER!!!!!
–I have decided that level 3 of the 30 Day Shred is the only tolerable level for me. I loathed the last 20 days of work outs until I got to level 3 this week. I need to figure out what my next move is going to be, I can’t go through another Jillian DVD for awhile!
