–Last night Laura and I hosted our first Blogstorm meet up for the Magic City Bloggers. We had such a great group of people come out, so many great and informative conversations were had. Attending an event like that really rejuvenates my love for blogging and reminds me why I do it and why Laura and I work so hard to keep MCB going strong.

–When I go out on a “school night” that isn’t Thursday, it throws me off. Like how is today only Wednesday?

–Along the same lines, when my Friday lunch group changes the day to Thursday, that Friday is the longest Friday of all the Fridays in all of the world.

–When I go out on said school night, and then come home and stay up until 11:45 PM because I need to wind down and settle in…it does not make for a pretty wake up at 4:35 AM. I may or may not have cursed the sweet ladies of PopSugar Fitness this morning asking me to lift weights and lunge. NO YOU LUNGE RIGHT, BITCH!

It wasn’t my proudest moment.

–Not only can I not hide my facial expressions, but if I am angry, anxious, mad, or upset….my chest turns bright red and splotchy. Thinking about it turning red and splotchy for everyone to see gives me more anxiety.

–Yesterday I walked back to a room three times before I remembered what I needed.

–Have you ever had so many ideas that you get overwhelmed and not do any of them at all? Oh, me neither.

Oodles of Zoodles – Asian Zoodles

To say that I am obsessed with my veggie spiralizer is an understatement. I have been longing for one after seeing several people post recipes all over blogland for zoodles. I finally broke down and got mine two weeks ago. I have talked several friends and even a coworker into getting one as well. If you love pasta but are trying to eat healthy, this is for you!

I mean, just look how pretty zoodles are!

The first recipe we tried was an Asian inspired zoodle dish.

What You Need:

4 zucchinis spiralized

1/4 cup soy sauce

2 tbsp sesame oil

2 tbsp rice wine vinegar

2 tbsp peanut butter

1 tsp minced garlic

1 tsp sriracha (perhaps more of you would like it spicier)

sesame seeds

olive oil

What You Do:

–Heat olive in a large pan on medium heat and add zoodles. Cook for about 8 minutes to get a consistency similar to noodles. Less if you would prefer it “crunchier.”

–While your zoodles are cooking, whisk together soy sauce, sesame oil, rice wine vinegar, peanut butter, minced garlic, and sriracha in a small bowl. Set aside.

–When your zoodles are cooked to your liking, drain them then return to pan. Add the sauce mixture and your sesame seeds (I don’t measure this, about 1 to 2 tbsp) and cook until heated through. About 1-2 minutes.

Weekend Shenanigans

Another weekend is on the books, folks! I honestly don’t know where my time goes on the weekends, I swear I don’t!

Friday my mom had to have surgery on her foot, so my sister and I agreed to work short days and head out there together to take them food and check on her after the surgery. I stopped by Little Italy’s to grab some pizza’s for everybody, my sister made them ham salad and some sides for the weekend.

I am glad my sister and I went out there together. We got some great quality time in the car to and from, and we all sat around and laughed and told stories for a few hours to keep my mom company. I also got to see my fur sisters. They are freaking huge for not even four months old!!!

Saturday, Chris and I hit up a few thrift stores, and had lunch with his parents at Jack Brown’s. I also got to stop by Marshal’s and picked up something for my office and a Butter nail polish for $4.99! Isn’t this color just gorgeous???

Sunday was meal planning and grocery shopping, along with some blogging work and house cleaning.

Friday for lunch I grabbed an unwhich from Jimmy John’s(yum!!). I picked up the red velvet oreo’s Friday night because my nephew and I were curious. They are delicious, go get you some. My mom’s best friend sent her Smiley cookies from Eatin’ Park (our favorite treat from Greensburg, PA!!!) My mom shared with my sister and I, so I brought one home for Chris to try. Publix had the most amazing fragrant strawberries this weekend, so I had to pick some up for breakfast! Along with snacking on hot aired popcorn and I had a Southern Cobb Salad for dinner Sunday evening.

 

And just like that, the Sunday Blues arrived…

Favorite Song – Ursher, baby! Because Usher is my boy, I am totally digging I Dont Mind.

Favorite Meal – I went to Tazikis with my lunch girls yesterday and got the Greek salad with turkey and it was delicious!!!

Favorite Beauty Product – Beauty starts on the inside. I quit taking Biotin for a month because I have been trying to figure out why my face keeps breaking out. I realized that it was not Biotin. What else I realized? Biotin is the shiz. I have been back on it for about 3 weeks now and my nails have never looked better.

Favorite Mug – I saw this at Starbucks this morning. I might have to go back for it….

Favorite Valentine Food – I love sugar cookies as much as anyone. They aren’t exactly waist friendly. How cute are these strawberries???

All you need is a cookie cutter and a skewer (or plastic straw for small children)

Complete and Create

For the month of January, the Choose Your Own Adventure Challenge theme was “complete.”

Let’s take a look at the goals I set out to complete and how I actually did.

1. Make eye doctor appointment – LOL yeah, no. In my defense, I received a heads up from my insurance company that I would owe almost $300 for some lab work I had done in December so any other medical appointments have been put on hold. I never in my life have seen a bill so high for some blood work. WTF?!?!? Don’t get me started on health insurance. I have serious RAGE.

2. Finish cleaning out the dog room/my office – I did do some more work but am not completely finished. We ended up focusing more on the basement this month. I also need to figure out what I am going to do with my three boxes of glasses sitting in there. So there’s that.

3. Gather research on plants that purify the air inside the home – I did a good bit of research and will start composing a post regarding this as promised! It might be awhile, there is so much to share!!!

4. Gather information and start planning spring garden – I started gathering information on herbs but not veggie plants yet. I will get to this and share as well. I want to sit down with my sister and get her opinion on what is feasible for me to be successful with given our space and such.

5. Purchase at least two things for the gallery wall – I did get one thing, so we will call that half done! It is better than nothing, OK!!! Again, we focused on the basement this  month.

I did complete a few other things this month that weren’t even official listed goals! One of them was removing 24 shirts from my closet that either currently do not fit or I will no longer want to wear. While I have a lot more to go through with clothes, I felt really good about this!

The theme for February is “create.” This is probably my weak area right now. I can organize the shit out of a room. Finishing my craft projects and stuff? I need to focus better on this, they always seem to take the back burner. I have so many awesome ideas and I need to work on them.

Anyways, I am babbling. My goals for create will be:

1. Create a completely new to me recipe with something that I do not have much experience cooking. I try lots of new recipes, but they usually revolve around the same basic ingredients of chicken, beef, turkey, mexican, italian, or asian food. I want to branch out even more.

2. ?? I am in the middle of designing something that I will share at a later date. It needs to be done in the next week or two so I am putting it up here to hold myself accountable.

3. Work on a DIY project for my office decor. 

4. Create a DIY project piece for the gallery wall.

5. Create a work space in the office area.

On a side note, I think this in pretty, sparkly letters might be my DIY for my office…

These five goals are quite lofty for me. I am hoping I don’t crap the bed on this month!
