Pork Medallions with Pancetta and Fennel

I don’t mind cooking, I really don’t. In fact, I actually enjoy it more often than not. There are just certain meals though that take a bit more planning, time and patience. This is one of those meals. Pork Medallions with Pancetta and Fennel is one of our favorite meals and I try to make it at least once or twice a year. It is not the healthiest meal, but it is a delicious one!

*Note – I used two packages of pork and two packages of pancetta to have left overs, you can cut this in half if you only want one meal –

Pork Medallions

What You Need

pork- cut into one inch pieces – I used two packages. I prefer to buy the thinnest cut that I can find. Boneless and skinless.

pancetta sliced into small pieces- I purchased two packages of this. Usually it is located in the deli refrigerator at the store where the special cheeses are. You can also find this at the deli counter if it is not pre-packaged at your grocery store.

fennel – This can be found in the produce aisle. I have never seen it at Target but Whole Foods and Publix almost always have it.

onion – I slice about 1/4 of an onion into very thin pieces for flavoring

1 cup heavy whipping cream

4 tbsp lemon juice

2 cloves garlic

1 tbsp olive oil

1/4 to 1/2 cup flour

pinch of black pepper

pinch of salt

What You Do

I like to go ahead and get everything prepped/chopped up front. These might seem like a lot of steps, but some take much less time than others!

1. Cut up your pork into one inch pieces and lay them out on wax paper.

2. Cover the pork that is laid out with wax paper and use a meal mallet (on the flat side, duh!)  to flatten the pork into medallions.

3. Combine flour, salt and pepper in a shallow bowl. Now coat pork with the flour mixture.

4. In a large skillet, heat the olive oil over medium high heat, cook half of the pork at a time. Remove all pork when done.

5. In same skillet cook pancetta until crisp. Add fennel, onion and garlic and cook for another 5 minutes.

6. Add lemon juice and heavy cream and bring to a boil.

7. Return meat to the pan, mix and heat until sauce is slightly thickened and heated through.

Enjoy! I usually serve this with homemade mashed potatoes and green beans.

Tip – Don’t know what fennel is? Sometimes it is hard to ask for help because people have no clue what it is! It is a bulb type veggie and looks like this:

That is about one bulb (to me) and I just cut up some pieces of the “stick” part and also use some pieces of the leafy looking part as well. It really has a delicious flavor with foods.

Weekend Shananigans

Well friends, I hope everyone had a great first weekend of 2015! I treated the weekend like my one last great hurrah before really buckling down on my eating again. Because you cant start a re-set mid-week, am I right?!

Friday – Chris had to work in the morning, so I had caught up on some blogging things, cut Mac’s fur, worked out to my new Just Dance game for the Xbox One (so much fun!!!!) and then got ready to head out for the afternoon. Chris and I went to lunch with a friend at Charlie’s Pub in Hoover. I ordered a hamburger and fries but didn’t take any photos. It wasn’t really that memorable, but glad we tried it once. I am quite a bit of a burger snob these days, so I am sure it was great by most standards.

Friday evening I made Pork Medallions with Pancetta and Fennel for dinner. This is something I only make once or twice a year because it is a lot of work but it is one of our favorite meals! I will be sharing the recipe later this week!

Saturday – I cleaned the house in the morning, read a lot of my book in the afternoon, played some 3D Mario World on the Wii U and just relaxed. Sometimes the weekends where you have no plans are the best weekends!!!

I also got lots of play time in with Gracie and Mac. Look at Gracie just going to town on her toy. She still has some puppy left in her!!!

Sunday – I finished my book (#17 out of 21 in the series) and started #18, then we meal planned and grocery shopped. I worked on some bloggy things in the afternoon and hit up the semi-annual sale at VS via the internet. For dinner I made homemade Chicken Fettuccine Alfredo and it was delicious! I will share this recipe as well!

While I hate to have the holidays officially ended now, and all that time off has come and gone…it will be nice to get back on a routine. To be honest, allowing myself to be super lax with my diet this weekend was fun at the time but has made me feel sluggish. I am fully prepared to take on my new challenges and will be sharing those with you. Jillian kicked my ass this morning, as per the usual. I only have ten days left of the 30 day shred and I am really REALLY sick of it. I am not sure what I will do once I am done. What is your current work out routine?

I am sure this week is going to feel like the longest week ever because we haven’t worked a full week in quite some time! I hope everyone has a great one! Let’s make 2015 our bitch!

Friday Favorites

Hey there 2015!!! I hope that everyone had a fabulous new year! We were hardcore on NYE and fell asleep on the couch watching the Mississippi State game. I woke up around 10:40 pm turned on Ryan Seacrest and T Swizzle, celebrated the eastern ball drop, woke Chris up and went to bed. I was born in the eastern time zone, so that is totally legit.

Yesterday was a super disappointing day in football for the SEC. I can’t even talk about it…on to next year! The only sweet spot was watching that tool bag Jameis Winston fumble the football as he fell on his ass and Oregon put the beat down on him. That part of the day I did enjoy quite much.

Favorite Song – Taylor Swift – Wildest Dreams – I just love this song! Laura got me the CD for Christmas and I felt like the 90’s as I flipped through the book and pictures that came in the packaging!

Favorite Meal – My mom and I went to Blackwell’s Pub in Cahaba Heights for lunch on Tuesday. I just love that place! I always get the same thing when I go there, and I wanted to change that. I had been wanting to try their “award winning” PB & J Burger for quite some time and so I did! Peanut butter and blackberry jelly atop a wonderful juicy medium burger. Yes, please! Their burgers are delicious!

Favorite Purchase – I stopped by CVS to see if they had any good Christmas stuff left over and sure enough they had the Snoopy hot dog toaster that I had seen back in November! Score!!!! This is the best $10 we have ever spent. The hot dogs turn out so delicious and were perfect for game day!

Peace Out 2014

Here we are, December 31, 2014. Did you accomplish all that you wanted to when you set out on January 1 this year? Did you make it the best year that you possibly could? I think about these things each year as it comes to an end.

Here’s a confession, I am not the biggest fan of New Years Eve as in let’s go out and party. I feel places are overcrowded, everything is overpriced and you know there is going to be about five road blocks on the way home and you are dodging drunks left and right. So why do I get excited about the new year?

I like to look at the calendar turning over as a fresh start. Around the holidays I tend to be a little lax on my diet and exercise as I let life happen and enjoy myself. Do I throw out all my hard work? No. So I wont be that person who hits up the gym for the first three weeks of the new year only to drop it again. However, I do tend to challenge myself in January to set the bar for the new year of health and fitness for me. I let go and forgive myself for those few extra cookies I had, or the seasonal brews I indulged in and just push forward.

I also like to look at out home, see what’s working and what needs changing. Our finances, perhaps there is somewhere we can save that we haven’t realized yet. My time with family, after enjoying the closeness during the holidays I try not to let it go away just because they are over. I was reminded how important family time is and try to make a plan to see those people regularly.

Some people prefer a spring cleaning, I prefer seasonal cleanings and purges and January is a great time to purge that in which you don’t need or no longer makes you happy.

Fall Goal Results/Winter Goals

Body

1. Make an eye doctor appointment. (LOL!!!) Fail. I did take care of some other doctor appointments though so there’s that. I have embraced the fact that I must wear my glasses more often than not and have it on the books for February. 

2. Find a work out that is actually going to deliver the results that I want to see. I think I am going to put together my own program, using several different types of work outs from weights, to cardio, to yoga/pilates, dance, barre, etc. Well I put together my own program and realized that I don’t push myself as hard now. I have started back with JM’s 30 Day Shred a few weeks ago and will re-asses from there.

3. Continue cutting down on cheat meals and cleaning up my diet even more. I say I have done pretty good but there is still more room for improvements.

Mind

1. Finish reading the Stephanie Plum series. Fail. I am on book 17 of 21. I hope to finish it up in the next few months. I got behind on reading the last two months and plan to change that starting this week!

2. Watch two new to me movies. I did this but forgot which ones I watched because it was right after I made the goal. Perhaps documenting my goals should be for winter?

3. Have a craft day with my mom.Fail. Horribly. We didn’t even discuss it. Perhaps sometime this winter?

Home

1. Collect items for the gallery wall. Fail. Oops. Christmas presents, I blame Christmas presents. Though, I did receive one item for the wall for Christmas, does that count? 

2. Work on clearing the “junk” out of the dogs room. Pass! I got rid of basically all of the junk that was in the room and cleaned it up A LOT. Still more to do, but I said start not completely finish!

3. Start putting together my office area. Pass! See above! You can actually see my desk area again and I got some things organized. I want to eventually get a desk for the room instead of the folding table I currently use. This maybe a spring budget thing….

Food

1. Try three new restaurants. Big Bad Breakfast, Babalu, Chicken Salad Chick

2. Try three new recipes. Breakfast Muffins, Korean Beef, Peanut Butter Roll Ups

3. Attend local food events. Attended Breaking Bread and the soft opening for Babalu. Also hosted a food drive at World of Beer.

Winter Goals

Body 

1. Complete a 21 day food challenge (more to come)

2.Finish up Jillian Michael’s 30 Day Shred (third time to complete this work out, great for a re-set)

3. Come up with a new cardio plan

Do you do seasonal goals? What is on your list for this coming year? I like to do seasonal goals rather than yearly resolutions as they are easier to hold myself accountable for, adjust as needed, and not be overwhelmed by them.
