–I may or may not have eaten an entire bag of M&M’s in a matter of a few days. OK two days.

–My favorite moment from the weekend? Christopher (my almost 10 year old nephew) introduced me to one of his friends after his basketball game. His friend smiles at me and says “Is that your sister?” Christopher said “No silly, it’s my aunt!!!” I just busted out laughing as my sister (who is four and a half years younger than me) gives me the stink eye. Hehe oh it felt good!!!

PS – Ash is now my favorite friend of Christopher. Obviously.

–I am still addicted to Trivia Crack and I have decided that maybe I should start watching more documentaries and history channel stuff because history is not one of my stronger subjects.

–I am the worst offender of shoulda coulda woulda. I saw the coolest anchor at TJ Maxx awhile back. For some reason, I talked myself out of it. Chris and I were looking for it last week and it wasn’t there. Because duh, it is like Newton’s law of the TJ Maxx/Marshall’s experience that if you didn’t buy it when you saw it, you will never see it again.

–I made myself a cup of coffee because I forgot that I already made myself a cup of coffee. Day, you have been warned.

Cucumber Salad and Lunch Ideas

One of my favorite places to go for lunch on Friday is Tazikis. It is a greek style restaurant with gyros and great sides like pasta salad and cucumber salad. I thought about it last time I was there, and I just knew I could recreate cucumber salad at home!!

Cucumber Salad

Theirs just had cucumbers, red oinions and tomatoes with feta. I decided to add some garbanzo beans to make it more filling.

What You Need

1 cucumber (diced)

1/2 red onion (diced)

1 can of garbanzo beans (drained and rinsed)

4 roma tomatoes (diced – I also cut out the juicy seedy part so it didn’t over power or make the salad soggy or slimy)

feta cheese (I love feta, I used the entire 4 or 6 ounce container)

3 tbsp red wine vinegar

1/4 cup of olive oil

2 tsp oregeno

1/2 tsp salt

What You Do

– Combine the red wine vinegar, olive oil, oregano and salt in a small bowl with a whisk.

-Combine the cucumbers, onions, tomatoes, garbanzo beans and feta in a bowl. Add dressing and mix.

– I kept mine in the refrigerator and served it cold for lunches all week.

I also wanted to share what I have been having for lunch lately. You can really get stuck in a rut with lunches when you bring them at least 4 days per week. I reserve most Fridays for what has become my “lunch club,” where I go out with same group of girl friends. No matter how tempting my co-workers lunch choices are each day, I manage to stick to my guns and eat what I bring. There is so much more than just sandwiches and salads, you guys!

Weekend Shenanigans

Another weekend is on the books!

Friday we decided to keep it chill. I made chicken enchiladas for dinner and we caught up on some of our shows for the week. I am so glad everything is back on now!!!

Saturday morning we got an early start and hit up the thrift store in Pell City and grabbed some lunch at Hwy 55. Hwy 55 is a cute little diner in Pell City that has 50’s-60’s decor and music and serves up some delicious hamburgers! Chris and I both ate for under $20, so it is a great deal too!

After lunch we were off to watch my nephew’s basketball game. It is always entertaining to watch kids sports. Parents get angry, the coaches are out of control, and there are just some kids that you know are going to be trouble when they are older by watching how they play. I am proud to say that Christopher conducts himself very well! I think he was a little nervous to have extra people watching him this past weekend though, he usually is one of the stars on his team but this week they lost their game. I am just glad that I got to go and I hope to make another before the season is over!

After the game, Chris and I decided to make a spontaneous trip to Gadsden since we were only 20 minutes away! We visited all the thrift shops there and then headed to Back Forty Brewery to grab a cold one. Back Forty is one of my favorite Alabama Breweries and I am so glad that we got to visit. It is such a cool space!

Chris got Truck Stop Honey and I got the Paw Paw’s Peach Patch. So delicious!!! While we were there we noticed that they sold beer vinegar. I have got to scour Pinterest for some recipes for it because that sounds amazing!!!

On our way back to our house, we decided to order Papa Sal’s for dinner. Papa Sal’s is this cute mom and pop Italian Restaurant in Clay. They have great prices and delicious food! I ordered the cheese ravioli with a house salad. It comes with a piece of homemade bread as well. Their house dressing is freaking amazing and one of my favorite salads from any where!

After dinner, we stayed up to see if our game systems we purchased that day had worked. They did!!! I wanted to catalog all of our games so we don’t buy duplicates (we have done that several times already). I tried a few different apps and they all suck!!! Why isn’t there a good one??? Anyone know of one? I wasted about 30 minutes trying to do this and got no where. Chris talked me in to playing a game instead so I decided to partake in some Scooby Doo gaming!

This one is so fun, but sort of hard! Why are all the cartoon games so damn hard?

Sunday morning I did some blog things, pursued Pinterest and meal planned. We then did our grocery shopping and I had lots of prepping to do for the week. We finally settled in to watch the super bowl but only lasted to after half time. I don’t really care about either team but was pulling for the Seahawks. I felt the commercials and half time show were lackluster. I love Katy Perry, but it the half time show wasn’t really anything special in my opinion until the very end with the flying star. I will say props to her for sticking to her true self. And I loved that Missy Elliot was there. My favorite commercial was Best Buds but I had already seen it on the spoiler that was going around on Twitter. The dog and horse get me every time!

In other news, my veggie spiralizer came in and I can’t freaking wait to use it!!! I have a sesame zucchini recipe and brown buttered sweet potato recipe that I am going to try this week! You know I will be sharing if they are good!

Favorite Delivery – I won the Younique Moodstruck 3D Fiberlashes and a lip liner from Duckie in a giveaway. I have only had a chance to use it before work this week, but the Fiberlashes is everything you want it to be!!! This stuff is seriously amazing and I will touch back with you guys soon with before and after pictures once I get to “play” with it!

Favorite Deal- When we were thrift store hopping last weekend, I happened upon some really cool kitchenware. I was just browsing and then I saw it. Glass mugs with a winter scene. I love winter scenes and have been loving glass mugs lately. 59 cents? Thanks, I will take both please!!!

Favorite Podcast – So Lauren introduced me to Call Your Girlfriend podcast and I am hooked. They say like way more than I think I do, and some of their views are a little different than mine…but I love listening to it in the car. They talk about political views, pop culture and they have discussed things like making friends as an adult and other agendas that are relevant to me.

–I was talking to my mom last night on the phone and she told me the weight of her puppies at their vet visit on Monday. I was like ummmm send me a picture. I haven’t seen them since Christmas. You guys….they are HUGE!!! Like I can’t even believe it!! Here are two then and now comparisons…

MM2 MM1–Yesterday was one of those days where I hated every single item of clothing I put on. This happens several mornings when hurricane Nadine comes swiping through and destroying everything in site then having to put it all back together because I am OCD.

Seeing Tracy (not to be confused with my sister) do her capsule wardrobe really has me thinking. Perhaps it is time to let go of all the clothes in my closet that I do not love, that do not fit, and that make me feel anger every time I enter to get dressed in the morning. I keep telling myself I have already done that, but clearly I have not.

–I am going to say it. I hate eggs. I hated eggs when I was younger, but started eating them in college because they are cheap and easy to cook. Every time I cook some for Chris now, I put some on my plate and take one bite and can’t do anymore. There, I said it. I hate them.

–I just realized that it is January 28th and I still have a lot of work to do to complete my goals for this month. Looks like it better be a really productive weekend!!!
