Listening – Serial. I am almost done! I started episode 8 yesterday on my way to work.

Reading -I am half way through the 20th book of the Stephanie Plum series! I can not believe I have read 20 books in one series. Especially since I had no intentions of going past the first one. Such a great series and I don’t know how I am going to feel when I finally catch up with the 21st book and have no more to go! Am I the only one who gets sad when a series is over and you have to leave those characters? At 20, I am pretty invested.

Watching – Last night we watched Tosh.O, The Mindy Project, The Originals and Pretty Little Liars. Is anyone still watching PLL??? I have something that I need to discuss immediately!!!

Loving – The fact that I have a girls night with my favorite blogger turned real life friends tonight! Also that I have a niece and a nephew who are doing exceptionally well in school! They are all doing well, but especially these two!

Working on – I still have some changes that I need to do to the MCB website. I need to work on my creative goals for this month. I knew going in that it was going to be a rough go at them. I am also working on getting over my fitness frustration and plowing through. I showed up and worked hard this morning despite my anger yesterday.

Anticipating- The Wild South Brewfest this weekend. Chris and I got to attend last year with some good friends and it looks as if we will be doing the same on Saturday. It is such a great cause and it was a lot of fun last year!

Guilty Pleasure – Grabbing a piece or two of the chocolate that Chris got me for Valentines last weekend.

Current Outfit – Anything warm! It was 12 degrees when I woke up this morning! Even for this winter loving Yankee, that is a bit chilly!

Confessions

–I skipped my workout this morning. I can’t remember the last time I skipped a work out. I’m not even sure why other than I didn’t feel like it. I woke up, got changed and sat on the floor for a few minutes playing Trivia Crack to wake myself up…as I do every morning. I then went to go get my weights and somewhere between the living room and the guest room I decided I just flat out didn’t want to.

This tells me it is time to change up my routine. To what, I am not sure. I am getting so sick of work out DVD’s and Youtube work outs. It is so hard to force yourself to do something that is miserable every morning. I really wish that there was a decent gym close to my house that I could hit at 4:30am in the morning. I will get over myself by tomorrow morning….hopefully.

–I refuse to cook dinner for just me. Last night I got home late from a meeting after work. Chris didn’t really want dinner at that point but I was starving. Instead of making something for myself, I ate a bagel thin. Ambitious, I know.

–Speaking of bagel thins, Kathy posted about her wheat belly experiment yesterday. After reading her experience in just two weeks I am thinking about it. Except, no rice? That would be hard. I may have to add that book to my list to see if it can turn me!

–Unfollowing people on Bloglovin’ that never respond to comments is the best feeling in the world. It’s like Bye, Felicia!

–I experienced heart burn yesterday for the first real time in my life. Or at least I think it was heart burn. I had veggie soup and tuna fish for lunch. Surely that did not cause it?! Is this a sign that I am getting old? Maybe it was just a fluke. Let’s go with that.

–I need to get on my goals for this month!!! When I realized that the month was half over on Monday I was like ahhh what have I even done this month? Then I realized it had only been two weeks. Darn you February!

Sweet Potato Noodles with Sage

Some people have told me that they just can’t get on board with zoodles. I get that. Perhaps zucchini does not appeal to you. Enter Sweet Potato Noodles. You guys, I can’t even begin to tell you how delicious this dish is!!! This is such a simple recipe with just a few ingredients that delivers a lot of flavor!

Sweet_Potato_Noodles

What You Need

2 large sweet potatoes, spiralized

2 tbsp olive oil for sweet potatoes plus 1-2 tsp for sauce

1/2 to 3/4 of a bag of real bacon bits

2-3 tbsp of red onion, chopped fine

1/2 stick of real butter (I use unsalted to keep sodium down)

1/4 cup of grated Parmesan cheese

2 tbsp of shredded mozzarella cheese

1 tsp of sage

1/4 tsp of ground nutmeg

What You Do

–Heat 2 tbsp of olive oil on medium high in a large skillet. Add sweet potatoes. Saute for 8-10 minutes. If they start to brown, turn the heat down to medium.

–Toss bacon bits in a small separate skillet and cook for 5 minutes until hot and crisp.

–In a small saucepan, heat 1 tsp of olive oil and cook red onions for 2 minutes. Add butter and stir continuously until melted and browned. About 3 minutes.

–Add sage, nutmeg, Parmesan and mozzarella cheeses to butter mixture until cheese is melted.

–Add bacon to sweet potatoes and toss the sauce over it. Serve immediately.

weekend shenanigans

Weekend Shenanigans

And just like that, February is more than half over! Is anyone else just as confused as I am as to how that is even possible?

Friday- This past week, the state of Alabama has sat and watched the weather predictions unfold for possible winter weather troubles Sunday night into Monday morning and again possibly Tuesday. While the predictions have changed several times, as they always do in the south…everyone and their mother is out buying bread and milk. I decided to get ahead of the game and do our grocery shopping Friday night instead of waiting until Sunday when we usually go for fear there would be nothing left. Of course, it now looks like it may just be a cold rain today.

When I finally got home, I made chicken enchiladas and we caught up on some of our shows like the cool kids tend to do Friday evenings.

Saturday – We were up bright and early and headed to Gadsden for some thrift shopping and to check out Dirt Cheap. We had a dry run and didn’t find a thing. We then headed to Chris’s parents house to celebrate his grandmother’s birthday. His parents ordered Moe’s BBQ and his brother came up from Mobile with two of our nieces so everyone was there. It was great to spend some family time.

Saturday evening I made homemade lasagna for Valentine’s Day. As I have shared before, this is our tradition every year and I love it!

Sunday we stayed in. I worked on the MCB site for a little while (one of my creative goals for this month), scheduled a few posts and then went downstairs and played video games with Chris.

In the afternoon we caught up on some more TV shows and watched The Interview. The movie was a little dumb, but not horrible. We also watched the SNL special last night! I really enjoyed that!

Weekend Eats:

WEEKEND_EATSChicken Salad Chick for lunch Friday. I ordered the Fancy Nancy Scoop that has grapes and apples as well as the pasta salad and fruit. Each dish comes with a pickle and cookie. She asked if I wanted to upgrade my cookie for a cream cheese brownie. Why yes, yes I do. And below is the lasagna before it was devoured over the course of the weekend.

I hope that everyone had a fabulous weekend! Stay warm to those north of us who will be getting our snow. I am not going to lie when I say I was looking forward to a snow day….sigh.

Friday Favorites

Favorite Song: Haley & Michael 500 Miles. When I was searching for the Budweiser commercial version of this song I stumbled upon this one and have fallen in love. I just love their voices together and their take on the song.

Favorite Workout: This Popsugar Fast and Furious work out is perfect. I love every single move that they do and it really gets you huffing and puffing in no time. It is pretty quick and I like to pair it with the six minute arm video of theirs.

Favorite Treat – It is rare that I will drink something with calories that isn’t Starbucks or beer. The San Pellegrino Blood Orange drink is such a refreshing and tasty treat that I will allow myself ever so often.

 

Favorite Lust – The pale pink Selma Saffiano Leather Satchel from Michael Kors is just gorgeous! I wouldn’t hate if it ended up in my collection!

Favorite Podcast – I know that I am way late to the party, but gosh darn is Serial addicting!!! I am half way through and I can’t get enough. I can see why she took on this case, as there are so many things to take a second look at. I have my theories so far, as I am sure everyone did half way through and I am interested to see if I am still thinking the same thing with the next 6 episodes.

Favorite Motto: If only everyone lived life like this, this about how amazing the world would be?!

Work Hard and Be Nice

Our internet was acting a fool yesterday and I didn’t get my post up, but the only thing I wanted to share from it was to give my girl Kristen a Happy Birthday shout out!

In other news, Valentine’s Day is this weekend. I love pink and hearts, but not the holiday itself. Never really have. Chris and I usually keep it low key, because who likes to eat in a crowded over priced restaurant?? Not us! I usually fix homemade lasagna and we spend a quiet evening at home. What are your plans?
