So in a former life (3 years ago when I lived in Atlanta) I worked in property management. Residential property management to be exact. If you are unfamiliar with my fancy smancy terminology…you know you apartment leasing office? Yeah well I worked there. For five whole years. Property management isn’t something that one necessarily sets out to go to college for. When I decided to major in Real Estate, it wasn’t so that I could hear every damn story under the sun about why Miss Princess in apartment 209 cant pay her rent as she walks back out to her car with her fake tears, carrying her designer bag and hopping into her BMW. That happened every. single. month. But don’t get me started! How did I end up in property management you ask? The real estate market was kind of scary and sketchy and I ruled out some of my other options the longer I dug in to my course work. I was bound and determined to get a job doing some thing real estate related when I  graduated though so there I landed. A steady paycheck I said. Just to get my feet wet I said.

Now, I will say that I worked with some AMAZING beyond amazing people during those five years. People I will never forget and will always be considered my friends. But I also worked with some scum and someone who I am convinced might have been the devil herself. Which makes me think the devil may very well be female. Go figure, am I right?!

Anyways, you wouldn’t believe the stories that I have to tell! I think around my second year in the business I decided that there wasn’t anything that could possibly happen that would actually surprise me anymore. And around year five I realized that yes….crazy shit is still shocking!

If you live in an apartment community, please do me a favor and be nice to your leasing staff the next time you have to call to place a work order or drop you check off. (Check? Do people still write those things these days? Yes, so they can accidentally post date it for a week out when their paycheck gets cashed and just have “not been paying attention” and are “so sorry.”) You wouldn’t believe the drama that they put up with every day in order for you to enjoy your apartment and keep you as safe as they can.

Not all my stories are about crazy people. There have been days where I cried in my office with a resident who lost their job and can no longer afford gas to get to job interviews, let alone rent. I have cried with a resident who lost their beloved dog of 10 years came to my office daily for almost a month because they were now lonely in their apartment and just wanted to talk to someone. I have seen kids who just graduated college start out with a roommate and two part time jobs to make ends meet and a year later they are moving out because they landed the job of their dreams and got their stuff together. I made friends, I gained family. I wouldn’t take back those five years I spent in those leasing offices.

For every pull of the heart string story, I have a story that will make you laugh. Cringe. Wonder what happened to humanity.

The last community I worked at before I moved to Birmingham was my baby. It was a lease up and I watched it grow from the ground up. It was in an area of Atlanta that has really blossomed in the last few years and every resident that moved in was like adding a member to the family. That was by far one of the best staffs that was hand picked by my favorite property manager I had ever had. We had been together for four of the five years that I worked for the company. We split apart a few times, but always managed to find ourselves back together again.

We had someone who came to tour the property. She was a bit odd, and we learned very quickly how needy she was. One of my co-workers had taken her on her initial tour. I remember her telling me about the lady that evening and how odd it was. She was on tour with her for a good hour, which is crazy! Most tours last 20 minutes or so. The next day the lady comes back and asks for my co-worker I told her that she wasn’t in that day but that I would be more than happy to help her and that my co-worker would follow back up with her when she came back to the office the next day.

We went out on tour, and she wanted to see every apartment that was available to move in to basically. Absolutely ridiculous! I was out on the property with her for a good two hours. She had her “assistant” with her, and her dog. There were specific things about her apartment location that were a must. She was concerned about what direction it faced, when it would get sunlight, where all the access points were to get to her apartment, the different routes you could take, etc.

The next day she came back to lease an apartment. She told me she no longer wanted to deal with my co-worker she only wanted me. I explained to her that because my co-worker was the first person of contact with her that she was the one who would get her commission and type up her lease but that I was more than happy to do her move in inspection and take any work orders or requests that she had. Annoying, but whatever.

The apartments were BRAND NEW. She was the first person to live in it. A move in inspection there usually took all of 5 minutes. There was hardly ever anything wrong. Her inspection took an hour. She opened the AC vents, every cabinet, checked every slat on the blinds, every light fixture. I had never seen anything like it.

I walked back to the leasing office and it was pretty much the end of the day at that point. I finished up some paper work and left for the day. Later that evening I was walking Gracie outside and ran into our courtesy officer. He told me he was heading to check out a possible attempted break in. I asked what was going on and he said he got a call from some “weird lady” and told me the apartment number. It was the lady I had just moved in. Lovely.

He went and checked it out and talked to her then came over to my apartment and told me that she claims someone was on the roof and was trying to get into her apartment. Impossible. There was no roof access over there. She was on the 6th floor. There was just no way.

The next day she calls me in the morning, mentions nothing of the “break in attempt” but has a work order for me. Some thing is wrong with the light fixture in her bathroom. I send one of our maintenance guys up there and he comes back and pulls out his phone. He took pictures of the light fixture in question. She had taken it completely apart. She also removed the shower head in the shower. Weird.

A week goes by, she had called the courtesy officer out two more times for strange activity and people following her. She calls and places a work order with me that her apartment is hot and the AC isn’t working right. I send a maintenance guy up there and he comes back and shows me pictures of where she had taped a plastic bag over the return vent. Um HELLO! That is why your AC isn’t working. He had removed it and left a note telling her how dangerous that was and to not do that again.

A day or two later I walk in my office in the morning and meet one of the residents I had moved next to crazy lady. He was waiting for me at my office door. I ask him what is up and he says that I need to go over and check on his neighbor, that something wasn’t right and she was freaking out. I call my courtesy officer, and grab two of my maintenance guys and we walk over. We get into her apartment and she is crying about how the government is out to get her. How we have spies trying to get into her apartment. How the light fixtures have laser beams that if she looks at them, they will burn her eyes out. That we are seeping gasses through the HVAC system into her apartment and a bunch of other ridiculousness. She starts to get hysterical. I looked at my courtesy officer (he was a police officer) he pulls me out into the hallway and tells me to get my maintenance guys out of there and that we are going to need back up. I was like ummm she has gone crazy. Literally crazy! He agreed so I did the only thing I could think of. I called the Grady Psychiatric Emergency line and they sent an ambulance over right away. The lady had gone legit crazy.

We had to deal with her lawyers in clearing out her apartment. She had destroyed the place. Every light fixture was removed and in a million pieces. The HVAC system was completely messed up. She had taken a lot of the appliances apart. The windows were all covered up. She really thought people were spying on her. Completely paranoid. Her poor little dog. It made me so sad 🙁 I called her “assistant” that toured with her to come over and take the dog. We didn’t want it to go to the pound and her assistant was the only person that she put down for an emergency contact.

I have never seen anything like it before. It was scary and crazy. I really just felt bad for the lady. I often wondered what happened to her to get her so paranoid. Maybe she had come off medicine or something? Who knows. I am just glad that no one got hurt and she didn’t hurt herself.

Healthier Baked Ziti

I love Italian food. I grew up eating a lot of it when I was younger. My mom is an amazing cook and would make homemade spaghetti, gnocci, ravioli, fresh breads, her own sauces, her own noodles. Just yum! Pasta might not be super friendly on the waste line though. That is very sad. I have tried taking a few of my favorite recipes and healthying them up the best that I could.

Chris asked for baked ziti last weekend, and it sounded so good! I used wheat noodles instead of white noodles, cottage cheese instead of ricotta and didn’t have a “heavy hand” while adding the cheese on top. I think it turned out wonderful, and it allowed us to enjoy one of our favorites without completely killing our diet.

The picture above was the next day reheats, so I spread it out on a plate to help it reheat quicker, I promise it looks prettier than that! I ended up cooking the whole box of noodles so we would have left overs, you could only use half the box and cut the recipe in half. I would have made my own sauce, but I wanted something quick and easy. I have shared my sauce recipe before, you can find it here.

What you need:

1 box whole wheat noodles

1 lb extra lean ground beef (or turkey)

2 jars of your favorite tomato based sauce (or 1 large one if you choose something that comes in a value pack. You want the amount of sauce to serve the same amount as the box of noodles. 1 jar isnt enough for an entire box of noodles)

2 1/2 cups reduced fat cottage cheese (I used the entire container that I got. It is between 2 and 3 cups)

3 tablespoons grated Parmesan cheese

1 egg

Italian seasoning

Oregano

Parsley

Garlic Salt

1/2 cup Italian cheese blend or mozzarella cheese

What you do:

Preheat the oven to 350.

1.Cook your noodles according to box instructions.

2. Brown your ground beef/turkey.

3. Mix together cottage cheese, Parmesan cheese, the egg and sprinkle in some parsley for good measure

3. Spray a baking dish with olive oil spray or Pam  (at least a 9 x 13 if cooking full recipe)

4. Mix the jar sauces with some garlic salt, Italian seasoning, oregano and any other seasonings that you like to use with your sauce. The jar sauces never have enough flavor! Then add your ground beef/turkey to the sauce mix.

5. Layer your baking dish with sauce first, then 1/2 the noodles, then 1/2 cheese mixture, then more sauce, the rest of the noodles, the rest of the cheese, the rest of the sauce then sprinkle the Italian/mozzarella cheese on top.

6. Cover your baking dish with tin foil, and cook in oven for 30 minutes.

So easy. So delicious!

On another note, I have switched up my creamers for coffee lately. My go to all year is Coffe-mate Peppermint Mocha but I have been feeling all the different ones that have come out for Christmas, and the new ones that International Delight makes. Eggnog Latte is always a must around Christmas time, duh! But seriously, have you tried Hot for Cookie?! My goodness. It is heaven in a cup for sure. Go out and find some right now! Your welcome.

Weekend Shenanigans-The One Where We Give Thanks, Eat and Shop

Well hello there blog land! I think it is safe to say that most of us took off for a little while to enjoy the holiday weekend with our family and friends. I know I sure did. It was nice to be unplugged from everything for the most part. My only regret this weekend was looking on social media after the Iron Bowl. Absolutely ridiculous!

I find this morning a cruel joke. How in the world is it Monday already!?!? Like seriously?!

Thursday – Thanksgiving was a day of traveling from house to house to eat and visit with our families. Chris and I watched a little TV Thursday morning and relaxed, then headed over to his parents house for our first Thanksgiving dinner. I love that my mom and his mom cook completely different things for holidays! It makes it easier to eat two big meals that day when everything is different. There was so much to choose from there, I had reasonable portion sizes of all my favorites: turkey, pineapple casserole, sweet potato casserole, mac and cheese, corn souffle and green beans. There was a lot of other foods but I stuck with portions of my favorites to not totally blow my diet! She was cooking for 18 people so it was overwhelming in choices! Yum!

We hung around there for awhile, then headed to my mom’s around 4:30 pm. It is about 50 minutes from Trussville to my mom’s house so we just listened to some music in the car and I enjoyed looking at how many different state license plates we passed on I-20 while in my turkey coma. My mom made homemade lasagna, pepperoni rolls, turkey, sweet potatoes, mashed potatoes, turkey gravy, northern style stuffing, corn, beans, Spanish rice, and cranberry sauce. It was all delicious and she was ever so kind to give Chris and I some left over lasagna, Spanish rice and pepperoni rolls to take home with us. She also made cherry and pumpkin pie, and gave me a few slices of cherry to bring home because it is my favorite! She also snuck some cinnamon sugar crust in my bag. Yum! She makes it with the left over crust dough that she has. Amazing as always! At my mom’s house it was just Chris and I, my mom and Thomas and my 3 step sisters. It was great seeing all the girls there. They always change so much every year!

After dinner, I stayed to help clean up some then Chris and I headed home. I had to go get changed and get caffeinated to head out with my mom! After I left she went and took a shower and got dressed, then drove out to my house to pick me up. We started shopping around 10:00pm Thursday night. We hit up Walmart in Leeds first. I only purchased a few little things for Christopher and Cooper (nephews.) My mom scored a few of their door busters, nothing major. We weren’t really looking for anything there.

After Walmart, we headed to the outlet mall in Leeds. They opened at 9:00 pm and we heard Loft was having 50% off the entire store. Woohoooo! We hit up Loft hard. My mom was Christmas shopping for me there. I think she bought me 4 different tops that I am totally excited about! I picked up some camis, they were buy 1 get 2 free. Yes, please! I also found the most adorable gold bow necklaces. They were $4.99 with 20% off! I grabbed one for me and one for Haven (niece.) We then walked to Nine West. They were having a HUGE sale on boots! My mom got me a pair of brown leather boots for Christmas. I am in love!

We hit up the rest of the outlet stores that we wanted to go to, stopped at Auntie Annie’s to get a pretzel and some caffeine, then headed to our next destination! Target! We hit up the Target in Trussville. It was around 2:00 am at this point. My mission for Target was to get Monster University for $10 for Cooper and a $7 CD for Berkley. I was able to score both! By this point, the store had cleared out for the most part, and they had carts out putting back things that people had left out. I looked in one of the carts and found the only copy of Monster University left in the whole store! YES! I was also able to get that CD for Berkley too! My mom scored some deals there too and even found herself a pair of boots for super cheap.

I stopped by the Starbucks for a skinny peppermint mocha and my mom got some Mt Dew, it was time to get caffeinated again! Here is a picture of our loot so far! And our caffeine of course!

After Target, we headed to Old Navy, didn’t find anything. Then we went to Belk and a few other stores that were at the Pinnacle in Trussville. Belk was totally picked over. The lady was telling us about a women who had started getting all feisty with some others over some boots there. No thanks. Crazy people.

We then headed to Kohl’s! My mom found a few cute things for herself, she got me one more sweater for Christmas, I found a super cute sweater that I wanted to purchase to wear before Christmas and I scored some super cute leggings for Berkley for Christmas! They were having some amazing sales. Everything I got was 50-60% off plus I had a 15% off coupon and a free $5 coupon!

After Kohl’s we headed to the Galleria mall in Hoover. By the time we got down there, it was starting to get light outside. My mom and I were loosing a little steam, it was time to fuel up with some food! I love that they keep the food court open because I wanted lunch food, not breakfast food! We ate at Farmer’s Basket and got out third wind!

Here is a picture of our findings after leaving the Galleria! I was able to get a super cute top for Haven from Belk for 60% off! I also found a pair of $20 black boots for myself there and I didn’t have to fight anyone for them. Score!

After the Galleria, we hit up another Target and another Kohl’s. Places were starting to get crowded again. My mom found a few more things at the other Target, but we walked out of the other Kohl’s. The line was FOREVER long and we just weren’t having it anymore. We stopped for lunch at Jimmy John’s and then headed to Bass Pro Shop in Leeds to try and find something for my brother in law. That place was a ZOO!

That brings us to about 3:00 pm in the afternoon. We were done. My mom dropped me off back at my house and she headed home. So we were out from 10:00 pm Thursday night to 3:00 pm Friday afternoon! I had so much fun! I love that my mom and I do that every year together.

Friday evening I spent on the couch in out of quick naps while we watched TV. Apparently I cant quite hang with no sleep like I used to haha.

Saturday was game day. Chris and I didn’t even leave the house. We hung around and watched TV in the morning, Chris played PS4 a little bit and then it was time for the Iron Bowl. The game was crazy, and we were on the edge of our seats pretty much the whole time. By the end of the game, I was standing and pacing the living room. I hate the way it ended, but life goes on. It isn’t the end of the world that we lost. We didn’t play our best, so that’s what happens. I am completely dumbfounded that people are threatening our kicker for not making some field goals and the way that some people are acting. I am also not surprised that some Auburn fans are acting like idiots either. That is how everyone acts regardless of who wins. I find it disgusting. It is just college football. If people got that passionate about more important things that go on in this world, could you imagine how much we could accomplish!?

Sunday I meal planned in the morning and headed to do our grocery shopping. We pretty much just hung around the rest of the day and kept it low key. Perfect if you ask me. I had let the dogs outside for awhile, and I peeked out to check on them because I hadn’t heard them barking for awhile. This is what I found:

I mean can they get any cuter??? I love how they are cuddled up together in the yard. It warms my heart. They have a whole acre to themselves and they are always together out there. It is so sweet!

Back to reality today people! It’s going to be rough, I ain’t going to lie!

Random Wednesday

So I have lots of randomness for you here today! First up, Joanna tagged me in her post on Monday to answer some questions! So let’s just get right to that.

1. What is your favorite type of music to listen to? It really depends on what kind of mood I am in. I get pretty tired of top 40 stuff quickly these days. All the songs are over played and some of them really just aren’t that great. Maybe because I am getting old? I dunno. Lately I have been listening to A LOT of Christmas music. I also listen to country, rock, rap, some older stuff from the 90’s and early 2000’s and just whatever I feel like. I like to sing along, but only when I am by myself. I am pretty sure that no one wants to hear me sing. I used to be alright, but I dont think so much anymore.

2. Who is/are your favorite bloggers? I will name a few of my daily must reads. These are the people I go to first in case I dont get any more time to read blogs for the day. Right now I have 262 unread posts on Bloglovin. Oops. I will catch up on Sunday or something when I am shopping’d out. Just kidding, I am never shopping’d out!

Joanna from Jaybird’s Flight who tagged me in her post.  Joanna is amazing, she blogs about anything and everything. Her and I text each other sometimes, mostly pictures of our dogs. She has a Puggle too! Pug and Puggle people are my kind of people.

Stephanie at Life According to Steph. Another pug mommy! Stephanie blogs about a lot of different topics as well and she has some great recipes! She makes every to do list her bitch and makes me feel super lazy.

Kathy at Vodka and Soda. Kathy is bad ass. She keeps it real on her blog and I like that. She is also pretty hard core on fitness and food and I like to be motivated by people like that!

Lauren from Eat, Drink and Be Lauren. Lauren has food porn for days on her blog. My goodness.I swear most mornings I am drooling just looking at her pictures! Sometimes…ok most of the time when I am reading her posts I think, are we the same person?

There are so many more out there that I could name but I am pretty sure you all have turkeys to thaw or some work outs to get done before consuming your weight in deliciousness tomorrow!

3. Would you rather live without your favorite drink or your favorite food? Why? Hmmmm. Do I still get to eat and drink other things? I can always drink water but I cant live without some of my favorite foods! Well, I take that back. Coffee. I cant live without coffee. I need caffeine. Duh!

5. Why did you start blogging? I started blogging because I wanted a way to document my every day life. I also had found a few fitness blogs on Pinterest and didn’t even realize a whole blog community existed out there! I saw that random people left these girls comments and I thought it was really cool how they were connecting with so many people that they would have never met.As an adult I find it difficult to connect with other people outside of work or friends of people that you already know. So I decided to hop on into the blogging community and I am so glad that I did!!!

I am not sure if I will show up for class the next few days or not. It is the holidays after all! Besides I have to start getting prepared for eating and shopping!

Curried Couscous Salad with Dried Cranberries and Citrus Vinaigrette

I love when I can prep something on a Sunday evening to have for lunch all week! That is just what I did for this week! I discovered couscous several years ago when I started venturing out and trying different things. You could say I was food sheltered most of my life, sticking to the “normal” foods that my mom would cook for us when we were younger. She was a picky eater and I basically liked what she liked and didn’t eat what she didn’t. I didn’t know any better. Lauren did a great post about appreciating food more here, and I completely relate to it.

So I have two favorite couscous salads that are my go-to’s when I am craving some for lunches. I have already shared my Mediterranean Couscous Salad,  now I would like to share my Curried Couscous Salad with Cranberries and a Citrus Vinaigrette finish. I know it might sound a little weird, but this salad delivers on the flavor for sure. Don’t let the word curry scare you off. It becomes for subtle when paired with the sweet cranberries and the zest of a citrus vinaigrette. The chichpeas and green peas add in some great flavors as well! This salad is best chilled, and you want to make it ahead of time and let all the flavors infuse together. It is just wonderful after it has sat overnight and perfect to take for lunch, or pair as a side for dinner. I think it would be great with turkey or chicken.

What you need:

Salad:

1 box of whole wheat original couscous (you could use plain instead of wheat)

1 package of dried cranberries

1 cup frozen peas

1/2 teaspoon curry powder

2 cups of boiling water

1 can of chickpeas, drained and rinsed

1/4 cup green onion, sliced

1/4 cup fresh basil (I add this sometimes if I am going to need fresh basil for something else that week, if I don’t have it, it still tastes wonderful without it. Only add it if you really like basil, as it is noticed.)

Dressing:

1/3 cup lemon juice

1 tablespoon orange rind

2 tablespoons water

2 tablespoons concentrated orange juice (the frozen kind in a can works best, you can store it in a container in your freezer and use it for recipes that require orange juice. It lasts awhile like that.)

1 1/2 tablespoons olive oil

4 crushed garlic cloves

1/2 teaspoon salt

1/4 teaspoon black pepper

What you do:

1. Pour the box of couscous, the peas, the cranberries and the curry powder in a large bowl. Mix in the boiling water, cover and let sit for at least 5 minutes. Fluff with a fork, add the chickpeas, green onions and basil. Leave sitting out to cool for a little bit.

2. You will want to grab a jar to mix your dressing in. I have one that I got from an Italian dressing packet kit, but a mason jar or even a small plastic container with a lid would do. Mix together all the ingredients for the dressing and shake. Shake it like a Polaroid picture.

3. Pour dressing over your couscous mixture, cover and keep in the refrigerator. It usually lasts all week in there.
