Nothing Ruins a Wednesday Like Realizing it is Only Wednesday!

Half way through the week people. I think we can do it. Just wishing our life away five days at a time. We are all still trying to get used to this time change. And when I say all…I do mean all. Gracie just wasn’t having it this morning.

“Ughhhhh. What time is it??””

I have never seen this dog not jump up out of her crate as soon as I open the door….or get out and go back in and lay down again. She is too cute. I let her little brother in there to pester her out. Apparently she doesn’t like an energetic 7lb fur ball to jump all over her and give her kisses first thing in the morning. Ah yes, the payback from when she was a puppy is sometimes more fun all on its own 🙂

oh my gosh. Chicken Taco salad that's HEALTHY! There's black beans, corn, green peppers, tomatoes, cilantro, green onions, chicken, avocado & tortilla chips. All tossed together with a taco ranch dressing made with Greek yogurt.
Thai Peanut Sauce.  Super easy & great on noodles or chicken: 1 tbsp peanut butter, 2 tbsp sesame oil, 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tsp sesame seeds
2 ripe bananas, 1 cup quick oats, choc chips (1/2 cup kind of a lot -- use your judgment), a heaping spoonful of natural peanut butter, mix well, plop spoonfuls onto baking sheet, bake at 350 for 15 mins. Delicious!

Kung Pao Chicken and Fried Rice

I have been cooking up a storm in my kitchen. Pretty much every week night I come home and create something for Chris and I. I try to make the meals as healthy as possible, but every once in awhile….you gotta have a little fun! Today I want to share with you one of my “take out at home” recipes. I love Kung Pao Chicken and fried rice from Chinese restaurants, but I often worry about the MSG and other such products that tend to be lurking in their food more often than not.

This is what you will need:

For the Chicken:

1 lb chicken breast, cut up in inch size pieces
1 tbsp Cornstarch
1 tbsp sesame oil (you may find you need more)
chopped green onions
3 garlic cloves, minced
1/2 tsp of crushed red pepper flakes
1/2 tsp of powdered ginger
2 tbsp rice wine vinegar
2 tbs soy sauce
2 tsp sugar
sesame seeds
crushed peanuts (I just use cocktail nuts)

For the rice:

2-3 cups of  day old brown rice (depends on how much left over you want, I usually use brown minute rice and cook it a day or two before and leave in refrigerator until I am ready to use it)
2 eggs
1/2 large onion, chopped
2 garlic cloves, minced
1 cup of mixed frozen veggies (I buy a bag with peas, carrots, green beans and corn)
1/4 cup soy sauce
sesame seeds
2 tbsp sesame oil

What you do:

Getting every thing done at the same time can be challenging at times, so I like to get prepped first. I get out all ingredients and set on counter. I start with chopping my onions, and setting a side. Then cut up the chicken breast. If you prep, it makes this a lot easier and more fun!

Toss the chicken breast with about a tbsp of cornstarch, maybe a little more…just make sure the pieces are mostly covered.

I use a small wok for the chicken, and a very large wok for the rice. Get the sesame oil in both. In the large walk, heat the oil then add your onion and garlic for a few minutes. Then add in the veggies.

Once the veggies are defrosted, push to one side and cook your eggs.

While the egg is cooking, heat up your small wok with sesame oil. Add chicken.

Once your egg is fried, add in the rice, soy sauce and sesame seeds. Just keep stirring until heated through, and ready to serve.

Combine the soy sauce, sugar and vinegar in a small bowl and set aside.

Once your chicken is cooked, push to the side and add green onion, garlic, red pepper flakes, and the powdered ginger to the wok. Let heat for a few seconds, then add in the soy sauce mixture and stir everything together. Add in peanuts and a tsp of sesame seeds. Heat thoroughly.

First Things First

First magazine subscription

My first magazine subscription was to Teen People. My mom loved reading people magazine, so she ordered me Teen People. I think she also ordered me 17 at the same time, or shortly there after. I loved to read magazines with her. I always have a subscription to something to this day. My mom and I usually have different subscriptions, and trade.


First real piece of jewelry you owned

My Grandma Jerry gave me gold cross earrings for my baptism when I was in elementary school. I felt so special when she gave them to me. I wore them all the time and took really good care of them. Unfortunately, I think they got lost in one of our many moves.

First time staying home alone

The first time I stayed home alone was when I was about 10 years old. My mom would be home about 30 minutes after my sister and I got off the bus from school every day, and I was a very responsible, trustworthy kid…so Tracy and I were OK for about 30 minutes alone each day. Tracy was 5 at the time.

THIS WEEK’S QUESTION: 

What is one of the most valuable lessons you have learned this year so far?

This is a tough one. There are so many life lessons to learn. I think the most valuable one for me so far, has been that you simply can not please everyone. I still struggle with this every day, but I am getting better. I have learned that you just need to do the best that you can. Sometimes your best will not be good enough. Sometimes, no matter how hard you try, you are going to disappoint someone. There are always going to be people that do not like you.

I stress myself out so bad just trying to please every person in my life. It is something that shouldn’t stress you out. It hurts my feelings so bad if I know someone doesn’t like me, or I did something wrong when I tried so hard. However, that is life.

I think when you accept that some times things don’t change, and you learn to let go….you will be much happier.

Blate and other Weekend Shenanigans

This weekend has been….eventful…to say the least!

Let’s start with the happies! This weekend was the Alabama Blogger’s March Blate. Joy is so precious, and she opened her beautiful home for all of us to meet. We had a great lunch, and wonderful conversation. I am so glad I got to know everyone a little better. There were a few girls that couldn’t make it, and they were very much missed!

And can we talk about the wonderful food!? I didn’t even eat dinner Saturday night because I was full of all the yumminess I consumed!
I brought cake batter dip as my “pinterest” recipe/craft. It is so easy to make and ALWAYS a crowd pleaser. All you need is a box of cake batter, 2 cups of nonfat plain yogurt and a tub of lite cool whip. Just mix it all together, and keep refrigerated until ready to serve. Don’t forget a box of Nilla Wafers to scoop it up with! 
Joy was so sweet, and gave us all a little treat while we were there. It’s all green for St Patrick’s day, can she get any cuter?

I am also attempting to start my own little window seal herb garden. I started with Basil and Cilantro. I will see how I do with these, and if I can keep them alive…I may add a few more! I got these kits at Target, and they were just $1!

Saturday night did not happen quite as planned. I had to leave the blate early so that I could make it home to pack up my car, and Chris was to DJ at my niece’s 10th birthday party. My sister had this amazing party planned out, there were black lights, all the kids were wearing neon, fun music…even a fun cake that she made!
We started out running late getting there. On the way there, we were driving down the road we drive every day to get to the Interstate. All of a sudden a dark SUV came barreling down the hill, completely out of control! They swerved real hard towards our lane and barely missed my car. I was quite startled, but reacted quickly enough to keep us safe. There wasn’t really anywhere right there for me to turn to check on them. Right up the hill was a gas station where cops always hang out, sure enough there were 2 cars there and we stopped and told them what happened. They went off to check. I am fairly certain the driver was drunk.
I was shaken after this event, but I was alright. We stopped to get gas and headed on to my sisters. We were driving down the road my sister’s house is on, and were about 2.5 miles from her house. I saw a head pop out from the tall grass, and knew that I was going to hit it. I took my foot off the gas and applied a very light break, clipping the deer on its hip. I knew a hard break or a quick swerve would have made me lose control of my car. I had no other option. I heard the hit and screamed. I looked over at Chris and we were both ok. I kept driving. I started crying and shaking. I had a death grip on the steering wheel, and started to breath really hard. Chris kept asking me if I needed to pull over and let him drive. I just shook my head and said that I could do it. Chris grabbed my cell phone from my console and texted my sister for her and my dad to come outside their house to meet us when we got there. As soon as I pulled in the drive way, I couldn’t get out of my car fast enough. I instantly ran to my sister and hugged her, then sat in the drive way and had one of the worst panic attacks of my life. Chris sat there with me and held my hand. My dad ran outside and was checking my pulse. (He used to be a paramedic, and he is still a Volunteer Fire Fighter/Rescue Truck) They got me to calm down and start breathing. 
I gave my sister the keys to my car and told her to take it around back and start unloading all the equipment. Why am I such a wreck? I was in a horrible horrible car accident my senior year of high school. Pretty much totalled out my mom’s brand new blazer. It flipped and landed back on it’s tires on the opposite side of the road that I was on. The person that hit me never even tried to stop, and was driving 70 in a 40. I was in another car accident my sophomore year of college, someone rear ended my friends car when I was in it. I  have VERY quick reactions, yet the aftermath is always a panic attack. I swear the sound of impact will haunt me the rest of my life. 
My chest still hurts today. I am pretty sure that panic attack probably took about 6 months off my life. 
In other news, I am happy to report the deer lived. My dad and stepmom drove down the road once I calmed down, and it was no where to be found. You got lucky this time Bambi! Perhaps next time, you should look before crossing!!!!!
The kids at the party ended up having a great time once Chris was able to set up and start playing music. I love to watch little kids dance their hearts out! They were just so happy and full of energy!

Sunday morning is always a fun time to make a big breakfast!
