1. What is your favorite thing about Spring?
I am going to be real honest, my favorite thing about Spring is breaking out my flip flops! My feet are tired of being crammed in uncomfortable shoes all Winter and rejoice that I live in the South now and they can be in flip flops for the next several months (at least until October!)
2. What is your favorite kind of flower to grow or receive. 
I love tulips. I think they are so cute! I also like orchids, hydrangeas and white or pink roses.
3. What is your favorite nail polish color?
Call me old school, but I love pink. Neon pink, barbie pink, pinkish/purple…any pink will do for me! My toes are usually some form of pink pretty much all spring and summer. Late summer I paint them a mint or teal color, and then fall and winter they are gray. I do not do much finger nail painting because I type way too much to keep my nails nice for longer than a day. Ain’t no one got time for dat!
4. What is your favorite outdoor activity?
I love sitting outside in the spring, and on summer nights when it isn’t too miserably hot and humid. Chris and I usually hit up all our favorite restaurants and bars that offer outdoor seating. Nothing screams fun like sitting on a patio, snacking on some food and drinking an ice cold craft beer.

5. Do you have any fun Spring plans?
I am hoping that Chris and I can make it down to the beach condo in Gulf Shores, AL sometime soon. Very soon. There is nothing more relaxing than sitting in the hot tub outside by the ocean sipping on a Pina Colada with no where to be! (Note that most of my fun is sitting outdoors consuming beverages of some kind.) The food down there is amazing, and I love hearing the ocean waves crash at night. Why am I not there right now!?!

It’s Friday!!! Yay!
1. Guest Bathroom – This is the first room that I am done “decorating” in our house. Now if only I could make decisions on the rest of the house. We have lived here since June.
2. CocoPPa – This app I have stumbled upon is amazing! You can change your wallpaper on your phone, and have super cute looking apps! I think I know what I will be doing for half the day today!!!
3. Laughing Cow – I am loving this Laughing Cow Swiss Cheese for 35 calories. I have been spreading it over Triscuits as a snack this week and yum yum.
4.  Diet Coke – You and I have a love hate relationship. Unfortunately for you, we are breaking up again. I went almost a year without you…and all of a sudden you keep creeping in my mind around 3:00pm every day. You are full of nasty, artificial garbage that my body does not like. I love you, but you must go.  So sorry. (Unless I am eating at a sit down Mexican restaurant, I think it is illegal to consume enchilladas and tortillas and salsa without you.)
 
5. All Mixed Up – In honor of our weather this week (the 70’s this past weekend, severe storms with some tornado watches on Monday, below freezing temps Wednesday night, and sleet last night it got me thinking of a great song of the 90’s. All Mixed Up 311. Your welcome.

It’s OK Thursday

Its Ok Thursdays
Its OK…
…to be super late getting a post up today.
…to be longing for a new cell phone case because that is the reason I wanted to go back to iPhone, but so in love with the one I have now that I don’t really want to change it.
…to have had a Diet Coke nearly every day this week. I was doing so good being clean…but every day around 3:00pm, something hits and I want a Diet Coke or a Diet Dr Pepper STAT! Next week, I need to cut this crap again! (You know…next week…not today!)
…to dream about going to the beach. Why is everyone on spring break and I have to be an adult? 
…to hate getting gas…and my oil changed in my car. 
…to be totally excited to spend an entire day next week with my mom and my sister!
…to be really confused every day this week getting dressed. Is it going to be sunny and warm, raining with severe weather or a chance of sleet. Only in the south east can all of these happen in the same week. 
…to randomly be in your closet and realize half the stuff hanging you haven’t worn in years, yet you still let it hang anyways. 
…to dream about all the fun decorating ideas you see on Pinterest every day, spend hours pinning things, and yet nothing is decorated in your house yet. I just can’t make a decision!
…that I feel totally accomplished and very adult like that the toilet in our master bathroom was fixed this weekend. 
…to be scared to join a spin class with my co-workers because I need to get in shape before I take a class with other people I have to work with. I don’t want them seeing my weaknesses! 
…to be totally confused about what kind of running shoes to buy. I think I need to go to one of those specialty stores where they watch you walk/run and tell you what to get. 
…to look at Essie nail polish for 5 minutes and not come away with any because they are all so pretty that you couldn’t decide on one so you gave up. Twice.

Bringing Sexy Back

So, I was watching Big Bang Theory last night on the CW while I was cooking, and all of a sudden I heard a familiar voice. I look up. It is my main high school squeeze, Justin Timberlake, on my TV. Apparently his album debut TV special is on, and I didn’t even realize it. Heck yes! High school Nadine came back. 
Then it got me thinking, what else do I wish would come back.
Dunkaroos – Why oh why did you leave me? Please come back to my lunch box ASAP!
Frosted Tips – Need I say more?
Justin and Brit Brit – They were just too cute. 
Sour Twizzler Bites – I mean seriously, why did you leave???? I was addicted to you and need you back in my life!
Jellies – I wore these all the time when I was 5. The were darn cute and I had a color to match every outfit.

Stick on earrings – I mean, they even came with a schedule. I didn’t even have to think when I accessorized!
Mood Rings – How do kids know what kind of bag they are opening when talking with their friends? Back in the day you knew how to speak to someone after looking at the color of their ring!
2gether – I learned math because of them. u + me = us (calculus, duh!)

Skinny Buffalo Chicken

Happy Tuesday everyone. Nothing starts my morning happier than a bowl of Kashi cereal that has about as much flavor as cardboard, am I right?

So any recipe will have me at crock pot. I love my crock pot. There is nothing better than coming home to a meal that is ready to go! It even has your house smelling delish!

You all know I just adore the salsa chicken recipe, and we rotate it in about once every other week. Well, there is a new chicken crock pot recipe in our house that will be swapped around now too!

Enter Crock Pot Buffalo Chicken

I found this recipe on Skinny Taste.

The original recipe include lettuce wraps, but I serve mine with celery and ranch or blue cheese dressing. Chris and I like the flavor without lettuce wrapped around it. It is only 147.7 calories. Can’t beat that!

What you need:

24 ounces of boneless, skinless chicken breast (I used about 3 chicken breast because that is what was in the package at Publix, it was probably about 16 ounces)
1 whole stalk of celery (you just lay it on top while cooking)
1/2 onion, diced
16 oz of chicken broth (I used a little more than 16 ounces, you just want to make sure your chicken is covered)
1/2 cup Frank’s cayenne pepper sauce

What you do:

Combine the chicken, onion, and broth in a crock pot. Place the stalk of celery on top. Cook on high for 4 hours, or on low for 6 hours. (I cook mine on low while I am at work, it ends up being about 9-10 hours, but turns out just fine.)

30 minutes before serving, remove chicken from crock pot. Reserve 1/2 cup of the broth mixture, discard the rest. Shred the chicken and return to crock pot. Combine the shredded chicken with the reserved broth, and the cayenne pepper sauce. Cook on high for 30 minutes.

The serving size is about 1/2 cup cooked chicken.

This would also taste great scooped up with tortilla chips, you know..if you aren’t worrying about calories. It would be healthier than regular buffalo chicken dip with the cheese!
