Ice Ice Baby

We got our snow yesterday! It is beautiful! You know what is not beautiful, ice on the roads the next morning! What a mess. There are so many accidents and roads closed that I sort of gave up this morning, and am waiting until 8:30 or so to leave for work.

In other news, I made some amazing chicken last night. It was my third time making it, and it turns out awesome every time! It is called Salsa Chicken.

What you need:
chicken breasts (I use boneless, skinless)
1 cup of salsa
1 can of cream of chicken soup (you could also use cream of mushroom, I prefer chicken)
1 packet of taco seasoning
1 cut of sour cream

What you do:
Combine the chicken, salsa, cream of chicken soup and taco seasoning in the crock pot. Cook on low for 6 hours. (I cook mine longer because I do this while I am at work, then come home and cook a side to go with it, and it turns out fine.) Before serving, add 1 cup of sour cream and cook until warm. You can eat the chicken breasts whole, or you can shred them and serve over rice, beans or with taco shells.

I cook this with Brown Spanish Rice.
What you need:
14 ounces of chicken broth
1 can of Rotel with green chilis
1/2 teaspoon of salt (optional, I usually don’t add it because I don’t want the extra sodium)
1 cup of brown rice(not minute rice)

Bring the chicken broth, rotel and salt to a boil. Add the brown rice, cover and lower heat to medium low. Cook until the broth has dissolved, about an hour, stirring occasionally.

Yum yum yum!

So, since I have been waiting out the ice at home this morning, my dogs have been trying very hard to keep me here today. Mainly Mac, Gracie is busy playing with her toys and chewing on her feet.

It’s OK…that the weatherman lied!

Well, they lie and make up crap all the time, don’t they? They said on the news last night that there would be snow at 8:00am this morning in the Birmingham area. Um, last time I checked…snow was white and powdery-like. Supposedly the time got pushed back, blah blah blah.

It’s OK that here in the South people freak out when they hear the word snow and immediately run to the store for milk and bread. What the hell are you going to do with milk and bread anyways? Sounds like some cheese, turkey, cereal and cookies need to join the party. Am I right?

It’s OK that I stood in my closet this morning trying to decide what to wear for 5 minutes. I do this every morning, it is no surprise.

It’s OK that I jam out to Taylor Swift nearly every morning on my way to work with Spotify. Her songs are just too darn catchy! Trouble trouble trouble. Don’t act like you don’t do the same!

It’s OK that I count down to lunch time everyday.

It’s OK that I HAVE to have coffee every. single. morning.

It’s OK that I made a seperate “page” for my pups yesterday, and just posted about 512 pictures of them. They are such cuties!

It’s OK that I am ignoring my sister’s text about what we should have for lunch on Saturday. Um, I want to be bad but need to be healthy…and I don’t know how to answer the question!

It’s OK that I sometimes procrastinate about really important things.

Random Wednesday

It’s just another random Wednesday (sang to the tune of Manic Monday)

Surprisingly this day has gone by super fast for me! Hence, it is about 4:30pm and I am just now getting this up! Today is going to be very random, sorry! It is late in the day and well, this is how my brain works around this time!

Dear Self – Next time you need gas on the way home, stop! You DO NOT appreciate it the next  morning. Like, ever!

I am so so so SO sick of the rain! OMG! James Spann says we may have snow tomorrow, and I will take it! I love snow! Anything but this rain!

Speaking of being sick of things, I am so over hearing about gun control. Looks like our rights are about non existent these days.

I have pinned about 1234 Weight Watchers recipes on my board this week. Looks like I have some grocery shopping to do!

First Things First

First thing I wanted to be when I grow up

The very first thing I wanted to be was an ice skater. I used to love to watch ice skating on TV. That was so unrealistic, and would you believe to this day my feet have ever yet to hit the ice?

If we are talking about the first realistic job, I wanted to be an interior designer or a fashion designer. So far from what I am doing!

First time I flew on a plane

The one and only time I flew on a plane was to visit my Grandmother in Pennsylvania, where I am originally from. I am terrified of flying and may never do it again!

First CD I owned

I am old enough that I actually owned cassettes first, but I do remember my first CD. It was Collective Soul.

Just for fun, my first cassette was New Kids On the Block!

WW Black Bean Soup

So with all this NASTY weather that we have been having lately…I decided to switch up our normal menu and make some Black Bean Soup last night. It is one of the many go to soup recipes that I have.

What you need:
3 cans of black beans, undrained (I prefer the 40% less sodium kind)
1 can of Rotel with green chilis
14.5 ounces of chicken broth (Again, less sodium and fat free is what I aim for)
1/2 teaspoon of red pepper flakes
1 teaspoon of cumin
1 onion chopped
4 cloves of garlic (I just used minced garlic because it is easier, 1/2 teaspoon is equal to one clove)
1 can of corn (I do not add this in mine, my husband hates corn…which makes me sad)

What you do:
Chop your onion, and get a big pot. Fry the onion and garlic for about 5 minutes.

Dump one can of black beans, onion/garlic mixture, red pepper flakes and cumin into the blender and blend.
Pour into pot.
Dump another can of black beans and chicken broth into the blender and blend.
Pour into pot.
Now add to pot the third can of black beans and Rotel.
Once it starts to boil, turn down the heat to medium and cook for about 20 minutes.

I serve mine with a teeny tiny bit of sour cream, green onions, jalapenos and my husband likes the mexican cheese blend with his.

It is about 199 calories (without anything you add) and I believe 4 WW points. It is filling and has some flavor to it, so it is a win for us!

I am a dope, and forgot to take pictures. I am so sorry to disappoint, I know a picture of my black bean soup would have made your day!

On a side note, does the sun still exist anywhere? It looks like we will not be getting a break from all this rain anytime soon. Boo! This girl needs some vitamin D!
