Thirty is the New Twenty…or Something Like That

My little sister kindly reminded in text on July 2 that I would be turning 30 in a month and 15 days. I sent back a friendly reminder that she is only a few years behind me. Then I realized, I really am going to be 30. I joke around and say that I am turning 29 again this year….but my birth certificate doesn’t lie. Neither do the lines around my eyes. 

Then I thought about it and I really should have my shit together by now, shouldn’t I? I mean, I am married and I have a good job. We are home owners, have nice cars, pay our bills, go on planned vacations, act like adults most of the time. OK maybe not most of the time, whatever. However, I feel as if I am still a child waiting to grow up. Am I the only person out there feeling this way? How have so many years passed since I graduated high school and college!? What seems like just yesterday at times (and forever ago at other times)…I was at UWG getting my BBA and having fun with my friends. I didn’t realize at the time, but I didn’t have a care in the world. Things seemed so different then, like my whole life was ahead of me just waiting to be conquered. 
Here I stand at nearly 30. T-H-I-R-T-Y. Thirty. Shit. That’s old. Like legit old. I used to think 30 was so old. Yet now…it feels so young, right? Isn’t 30 the new 20 and 40 the new 30? 
When did 21 year olds look like babies? Like for real. I have noticed that going out on any given weekend night I find myself looking around at these kids holding beers. Do they have a fake ID? What parent let their kid out wearing that short dress, you can see her ass. Oh wait, shes 22? Since when? She looks TWELVE! When did this happen? I know when I was 22 I wasn’t wearing shorts that short or dresses that look like that. Clothes have changed. 
No they haven’t. I have gotten old. 
While I have learned many life lessons, I feel like I know nothing. I have gained some new friends and lost some that I thought I would have forever. I changed career paths more than a time or two. There have been things that have happened in life that just aren’t fair and blessings that probably weren’t deserved. I have made lots of mistakes, I am far from perfect. I have hope that maybe I have helped someone a time or two as well. 
As I get closer to the day, I realize more and more that life is short. That is such a cliche, but it really is. Time just keeps on flying by year by year. I feel like Christmas wasn’t that long ago and, yet it isn’t that far off either. I also have my body letting me know that I better start really taking care of it, as things start breaking down little by little.
As the day seems to draw nearer and nearer, I am just going to work on embracing it. You know, probably because there is really no other option….you ain’t getting any younger. Am I right? Thirty is the new twenty darlings, that’s the fact. I am not getting older, I am leveling up!

The hardest part is committing to a color. I love the teal, pink, red, pistachio, ahhh I can go on forever. And its not just pink…there is hot pink and baby pink. Too many options.

Mediterranean CousCous Salad

I made Mediterranean CousCous salad for lunches this week. It is one of my favorite go-to’s for lunch when I am tired of certain things or just can’t think of anything for the week. It pairs well with anything…soup, salads, other little sides. It is also a great side dish for chicken or other meats. It is super easy to make and needs to be prepared ahead of time, as it is best served cold. Although, you could serve it warm if you wanted and it still tastes good. I would know as I am the most impatient person on the planet when it comes to letting foods sit.

What You Need:
1 box of CousCous – I like the Far East Whole Wheat Original 
1 red bell pepper
1 yellow bell pepper
1/2 cup of Kalamata olives (I forgot to get them at the store when I made it this time, duh!)
4-6 ounce container of feta cheese (I use reduced fat and you can’t tell the difference)
1 tablespoon of fresh minced garlic (I have used the jar kind before too, just use less than a tablespoon, when using jar I use about 1 teaspoon, maybe 1 and 1/2 tsp)
1/4 cup extra virgin olive oil
1 1/2 tsp of balsamic vinegar
dash of salt and pepper

What You Do:
Cook couscous according to box instructions. Then let cool. I usually just pour the box of couscous in the large bowl that I plan on keeping it in, dump the boiling water over it and place the bowl lid on it and let is sit in the refrigerator for a little while to cool. When it is ready, fluff with a fork.
While the couscous is cool, I prep all me veggies. Dice the red and yellow pepper.
In a small bowl, combine the olive oil, balsamic vinegar, salt and pepper, Wisk.
Dump the peppers, feta cheese, and garlic into the couscous and mix together.
Pour the olive oil mixture over and mix well.
It is now ready to serve! Enjoy!
You can keep this in the refrigerator for several days, that is why it makes a great lunch companion!

Weekend Shenanigans-The One With the Long Weekend

Well hello there blog world. I took an unintentional four day holiday weekend from my blog too apparently. Whoops.So there is a few things on my agenda today. Forcing myself to go to work after having 4 days off, making myself blog because I was a bad bad girl….and celebrating the fact that when I opened blogger this morning I realized that this is my 200th post! Woo hoo!
Let’s get on with my weekend, shall we?
Wednesday we shut down the office a little early, so I headed to Target to pick up breakfast items for the weekend. When I was leaving, there was the cutest old couple in wheel chairs racing each other out the doors! I followed them outside, and it is hard to tell from this picture, but they caught back up with each other and rode side by side the entire length of this shopping center. It just warmed my heart! I texted this picture to Chris and said,  “I hope we are racing our wheel chairs out of Target in 50 years!” So darn cute!
Wednesday evening we headed over to my sister in laws for dinner and hung out for a few hours with them. Andrea and I are addicted to Ruzzle. Have you played it yet? It is like Boggle and super fun! You can download the free version on your phone. If you get it, let me know and we can play 🙂 
Thursday Chris had to work in the morning, so I did 3 loads of laundry and hung out with the dogs in the morning, then we headed over to Bargain Hunt in Birmingham when he got home. We ran into his parents there, ended up going out to lunch with them at J Alexanders and then we went to their house later that night to ring in the 4th. 
Friday we had a road trip planned to Huntsville. There is a Bargain Hunt up there that we were dying to check out. Let me save you the trouble…the Huntsville Bargain Hunt is the most sucktastic of them all. They didn’t have a darn thing we wanted. It wasn’t a wasted trip though…we also checked out this place called Gamers Paradise. That place rocked.

Then we had to choose between Steak n Shake and TGI Fridays for lunch. TGIF won. It was Friday after all. This deliciousness happened!

That’s right I ordered an appetizer for my main dish, judge away! (With a side of sweet potato fries.)
After lunch we met up with one of Chris’s friends that lives in the area. We met her at this place called Stem and Stein. That place was the most awesome place ever. I wish we had something like that in Birmingham! We hung out there for like 5 hours and met a ton of cool people. I tried 3 amazing beers while we were there, and sampled some wine.
My beer loved me back, as a heart appeared in the foam! I should have taken a picture of it about 5 seconds earlier because it was the perfect shape before it started to drift away!

Saturday I made a breakfast pizza. It turned out super yummy and tastes even better left over! I will be sure to post the recipe this week!

Saturday was a total day of lazy and I loved every darn minute! Saturday evening Chris and I turned out living room into a bowling alley and had some fun!

My victory dance. I got a lot of strikes 🙂 I am way better virtually than in real life!
Sunday we met up with Chris’s sister and brother in law for our usual weekend trip to Bargain Hunt Birmingham and lunch! That’s right, we were at Bargain Hunt 3 times this week and would you believe we found stuff yesterday. Goes to prove that you just never know when it is worth going! We had lunch at Baumhowers, our last bad meal. We went grocery shopping last night and let’s just say there was NOTHING bad in our carts. Time to buckle down! 
I hope everyone has an awesome week! I can’t believe how fast the last 4 days went by. Work is going to be tough today, but someone’s gotta do it!

Hump Day

It’s Hump Daaaauuy!! (Spoken in me best excited camel voice.) Not only is it Hump Day, it’s also my Friday!!! 

How exciting is that? Nothing makes me more excited than a free 4 day weekend! Wish we had plans to go to the beach or something, that would be wonderful. You know what else is wonderful? Diet Coke. Yup, I had an emergency Diet Coke stop off this morning on my way to work. It couldn’t be helped, it was inevitable! Sometimes you just need one. 
This post is random. Much like today. I’m all confused since it is two days in one and I have about a gazillion things to do before I can’t leave work this afternoon. Gazillion is a real number people, I promise.
What’s everyone doing for the 4th? Alabama ladies…what’s your favorite thing to do around Birmingham on the 4th? Provided it doesn’t rain!
