Friday Five

1. It’s Friday. This has been the longest freaking week ever!

2. Bowling. Tonight we are supposed to go bowling with some of our sweet friends. I suck at bowling, but I always have fun laughing at myself!

3. Cooper. My nephew Cooper turns 3 tomorrow!!! I can’t believe that little man is getting so big!

He is such a cutie! I love the picture of him and his big brother Christopher!

4. Urban Decay Naked. I seriously love this eye pallet. I know, I am late to the party…but better late than never!

5. Dunkin Donuts Carmel K Cups. This post was possible today, thanks to some Dunkin Donut K Cups! Seriously, if you have a Keurig, do not walk but run to the nearest DD and get these things ASAP! They are so yummy!

That’s what I got today folks. Just faking til I make it to 5:00pm! Happy Friday!

Skinny Cajun Chicken Pasta and Kale Chips

I have been experimenting in the kitchen all week, and I have some super fun recipes to share! Monday night I attempted Cajun Chicken Pasta. It was yummy, and not too hard to make once you have all your veggies cut up!

Coming in at only 324 calories and you are feeding your carb craving, you really can’t beat it!

So here is what you need:

  • 8 ounces uncooked linguine
  • 1 pound chicken breast 
  • 1-2 tbsp Cajun seasoning (or to taste, I used A LOT of cajun seasoning)
  • 1 tbsp olive oil
  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1/2 red onion, sliced
  • 3 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1 cup fat free low sodium chicken broth
  • 1/3 cup skim milk
  • 1 tbsp flour
  • 3 tbsp light cream cheese
  • fresh cracked pepper
  • Scallions chopped
  • salt to taste
  • Garlic Powder
  • Cooking spray


  • Start by prepping all your veggies.

    Go ahead and start boiling your water for your noodles. 
    I cut up my chicken into cubes, but you could buy the strips and use them that way as well. I like them in smaller pieces. They cook faster and its easier to make sure that each plate gets chicken. You want to season your chicken with lots of Cajun seasoning.
    In a blender, make a slurry by combining the milk, cream cheese and flour.
    Heat your skillet over medium heat with cooking spray. Cook the chicken until it is no longer pink. Add olive oil, red onion, red and green bell peppers, and cook for about 5 minutes. Add tomatoes and cook for another 3-4 minutes. Season with garlic powder and cracked pepper. 
    Drain your noodles if they are done. 
    Turn the heat down to medium-low and add the slurry. Stir and let cook for about 2 minutes. Add your noodles, and adjust the salt and Cajun seasonings to your taste. Toss well to coat. Top with scallions.

    Enjoy!!!

    I also made kale chips to snack on this week. 
    What you need:
    2 bunches of kale
    1 tbsp of olive oil
    sea salt to taste
    Preheat oven to 300 degrees. Wash your kale, and lay out on a napkin to dry.

    Once dried, tear the leafy parts of you kale up, and toss in a bowl with olive oil. I massage it around with my hands to ensure that all pieces are coated.

    Spread out in a single layer on a baking sheet, and spread with season salt to taste. (I put a piece of tin foil down on the sheet so I don’t have to clean it. It is all about saving time people!)
    Place in oven for 17-22 minutes until crispy. 
    Enjoy!
    You can place it in a rubermaid container for up to a week.
    This morning on my way in, I was behind the royal cup truck. Is it bad that I was planning on turning Fast and Furious on him for some coffee in the back?

    Sorry, I’m NOT sorry!!!

    Linking it up with Staci to say, I’m sorry I’m not sorry!!!! Staci is freaking hilarious and you have to go check her out, just make sure you don’t sing songs about her mom….she’s not sorry to go crazy on you for it!

    I am sorry that I am not sorry about my road rage tendencies. There are truly some idiots out there, and if you don’t understand the laws of the road (written and the ones that go without being said) then you don’t need to be driving…ever. Or parking for that matter. Good grief have I seen some messed up parking. If that lot is full, and you can’t park your boat….go to the end to take up two spaces. Don’t be taking up 3 spaces in the front near the store when it is pouring outside, your car will most likely end up keyed! Not by me, I just like to leave you parking tickets. My favorites include “Parking isn’t your thing, stick to drive thrus.” “This parking job violates the law…of physics.” “Go to a mechanic, your steering’s off.” “Maybe a GPS system would have helped you find the middle of this parking spot.”

    I am not sorry that I post a thousand pictures of my dogs on my blog. They are freaking adorable and I love them more than most humans…so get over it! You can’t tell me that this face doesn’t make you laugh!

    I am not sorry that I blast my 90’s and early 2000’s music more often than not. I can’t help that the boy bands and B Spears are way better than anything current!

    I am not sorry that I have tolerance for ridiculousness.

    I am not sorry that I am old and go to bed most nights well before 10:00pm. My life is happier without the 10 o’clock news anyways.

    I am not sorry that I do not like grits or okra. I was raised in the north, and we didn’t have that sort of stuff there. That shiz is nasty, and no it is not because I haven’t had it “fixed” right…it’s because I don’t like it!!! The texture alone is enough to gag me, thanks.

    Thoughtfulness Goes a Long Way

    So, I had a post idea for today, but it went out the window as my day progressed to crappy. I will leave out the details, but let’s just say I was feeling down and and defeated earlier. One of my co-workers noticed that my eyes were watery and red, and she asked what was wrong. I told her a little bit about what had me down and I hadn’t really seen her since because I have been working on a project.

    I left to go to lunch with one of my amazing friends whom always makes me feel better. I also managed to stop by Sephora, because who doesn’t cheer up in that store lezbehonest! I dreaded coming back to work, I dreamed about getting on I-459 and heading straight home….but I found myself in the parking lot like a good little employee.

    When I entered my office, there were flowers and a note at my desk.

    I seriously work with a few of the sweetest people on the planet. Chris (not to be confused with my husband Chris, Chris is a girl that works in my office) is seriously so thoughtful. Yesterday she brought flowers and a cookies and cream cake for another one of our coworkers who had some upsetting news on Friday. Today, she brings me flowers and a sweet, encouraging note. Why can’t every one be so thoughtful to others? I am not just talking about getting things for people, the note actually means more to me and brought tears to my eyes. Just a few sweet words can really change someone’s attitude and perspective. I am truly blessed to be able to work with such amazing girls. 
    On another, completely unrelated note, I am thinking about purchasing a Clarisonic. Yes, I am late to the party…I know this. I was speaking with someone at Sephora today, and have been toying with the idea for awhile now. Any of you out there have one? Do you totally love it and think it is worth the steep price tag? I was thinking about getting the Mia if I get one, I don’t need different speeds and all that fancy business. Anything else out there right now that you are totally loving? Let me know!
