Weekend Shenanigans

Why, hello there. This weekend just sort of came and went and I am standing here like, how in the world is it Monday morning???

Friday evening, Chris had to meet a friend downtown so after work I had the house to myself for a few hours. In that time, I read a little and cut half of Mac’s fur. Why half? Because Mac has zero patience to be bothered by fixing his homeless old man look he has going on. After fighting with him for an hour and cutting enough fur to create two more Mac’s…we were both over it! He doesn’t know this, but we have another cutting session later this week. He’s a mess.

Saturday morning I got up and cut the front and side yard. I was outside for two hours with a temperature of 86 degrees and the bright hot sun. (All before 11am) If that isn’t a cardio work out, I really don’t know what is??? It was time to have some fun after that, so we headed out towards The Summit. We stopped by Belk so I could pick up some face wash and toner, then we decided on Chuy’s for lunch. My one cheat meal for the week. We sat out on their patio and soaked in the beautiful views. I never tire of this view.

Afterwards, we were on a quest to find limited edition Amiibo’s (fail) and we also stopped by Zone 1 in Chelsea. On our way back home, we passed a thrift store in Inverness and decided to stop. Their prices were a little high for a thrift store, but I did manage to score two glasses for my collection!!!

Yesterday consisted of meal planning, grocery shopping, food prepping and lots and lots of Chicago Fire and Chicago PD. We actually are completely caught up on both shows now and have no clue what to do with out lives. Literally. It was really depressing. What shows are you checking out this summer? Let me know…I need to find something else to obsess over!

This week went from having nothing to do, to lots of stuff to do after work a few lunch plans so it is going to be a busy one! I hope that everyone has a fabulous week! I am linking up with Biana this morning.

Favorite Song: Chris has released a new mix this week. It is free for download on Soundcloud! My absolute favorite track on this mix is the very last song that was remixed by DJ Kontrol. It is Elastic Heart by Sia and this version is so much better than the original!!! It is awesome and I insist that you listen to it.

Favorite Work Out Clothes: I am in desperate need of a few new outfits to work out in. I basically have three that I rotate and have to wash constantly and one of them is really on the verge of needing thrown out. JCPenney was offering $10 off $25 last weekend. I headed over there and scooped up this top this reversible sports bra on the cheap! The top was $6.99 (reg $18) and the sports bra was $14.99 (reg $26). HELLO BARGAIN! I freaking love this top and want one in every color!!! I couldn’t find the top online to share the link, hence why you get me in a selfie. I wanted to pose in such a way that you could see how flowy it is.

Favorite Purchase: Target had sent me a $5 off $25 apparel coupon. Score! I wasn’t in love with any of their swimsuits, but I did find a coverup that was just perfect! Cartwheel had a 10% off swimwear deal too! I got this in black. It is strapless, I can only assume those are swimming suit straps that are showing in this picture.

While I was walking to the fitting room with my swimwear, I spotted the cutest dress and there were only two left! Upon a closer look I realized that one of them was my size and I snatched it right up. How cute is this? And it was only $24.99!!! I got this in Pomegranate Pink. My store only had 2 pink dresses and 1 blue left, I didn’t even see the other two colors. Super flattering on!!!

Favorite Recipe: Kathy was kind enough to share her coconut flour muffin recipe with me. I have been eating this every morning for breakfast with a scoop of her homemade apple butter on top. Freaking delicious!!!! And healthy!!!!

The muffin: grease a ramekin with coconut oil. Mix in a small bowl 1 egg, 1 tbsp unsweetened almond milk, 1 tsp coconut flour, 1/2 tsp pure maple syrup or honey, 1/2 tsp pure vanilla. Pour mixture in ramekin and heat on high on microwave for 2 minutes. Holy yum.

–Why must everyone share the same shit on social media over and over again? Yes, the Vanity Fair issue came out on Monday. Yes, Bruce is now Caitlyn. Fabulous for her. Stop cluttering my feed with the same damn links over and over again!!!! #weknow!!!

–Speaking of Caitlyn Jenner. Do you know what I thought when I saw her picture? Well fuck…her hair is prettier than mine. Probably why Kris is bitter. #bitterbitch

–The book I am reading had a really awkward passage the other day that sort of came out of nowhere. I was like….WTF? Where is this going? Has that ever happened to you? #awkward

–Tuesday night the weather was just awful. I stayed a later at the office when the downpour started, hoping to avoid it. I forgot I live east of where I work and would be heading right back in to it. When it is a tsunami raining real hard, I have to have certain music on. Comforting music I can sing too but still be paying close attention. Usually this is music from the late 90’s early 2000’s. (hello Evanescence) Sort of how when you are lost you have to turn the radio down. #bueller

On another note: My face has decided to freak out, once again. Why are skin issues a problem for someone in their 30’s??? Greek Quinoa Salad

Today I wanted to share my Greek Quinoa Salad recipe with you guys! A few of you expressed interest in it yesterday, so here you go! This salad is delicious!!! Now, I am the first to tell you that I was a skeptic of quinoa for the longest time. I had it once or twice, and it just wasn’t any good. Well, it wasn’t prepared in a good way apparently! I have had it a few times since, and all have been wonderful experiences! If you have mixed feelings about it, give something like this recipe a try!

What You Need:

1 cup quinoa

1 and 1/2 cups vegetable broth

1 cucumber – I diced this up with the skin on, but left out the seedy part

8-10 grape tomatoes, halved

1 container of feta cheese (4 ounces)

1 red bell pepper, seeded and diced

1 small red onion, diced (about 1/4 cup to 1/2 cup)

1 small container of sliced black olives, rinsed

For the “dressing”

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

1 tsp lemon juice

1 tsp honey

1/2 tsp dill

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp oregano

What You Do:

–Boil veggie broth and quinoa on high heat. Once boiling, reduce heat to low, stir and cover with lid and let simmer

–Once the liquid is evaporated, let the quinoa sit for about 5-10 minutes to cool a little

–In a small bowl, combine all of the ingredients for the dressing and mix

–In a large bowl, combine quinoa, veggies and then mix in the dressing

–Refrigerate until ready to serve

I keep this in the refrigerator all week for my lunches, but it would make a great side dish! Especially in the summer since you serve it cooled.

It sure is beautiful with all the colors, isn’t it?

Why hello, June! Can you believe it is June 1st? I feel like we go through this every month, but seriously…where does the time go? Today is the day folks. Today is the day I go grain free, dairy free, and processed free! I picked up some stuff at the grocery store that I have never even looked at before. Hello, coconut flour, I am looking at you. It is time to kick it in to high gear. I also hit a PR in my run this morning, so I am feeling extra motivated!

Let’s get to it, shall we??

This weekend there was lots of Chicago Fire watching, cleaning house, meal planning, writing a guest post for another blogger that I am super excited about!!!, letting go of a few more clothing items, and Mario Karting.

Saturday, we went to Asian Rim for lunch. I had the spicy tuna roll and said my final farewell to rice. We sat out on their patio and it was so pretty outside!!! We ran a few errands while we were out that way too and oogled over some cute new cell phone cases but couldn’t commit to any of them.

My sushi will have to come from Whole Foods from here on out with quinoa! Shout out to Whole Foods for being so awesome with their sushi choices!!!

Saturday evening we headed to my SIL’s house for my MIL birthday celebration. Always good to spend some time with family. We also consumed some more Moe’s BBQ which is always delicious. Zero cake for me. Will power! It also helps that I don’t really care for the cake and usually only consume it for the icing.
