Tacos. What can we say about tacos? They are amazing, and so very versatile!! Gone are the days when you are stuck with just ground beef and some cheese, though there is nothing wrong with those either!!!
A few weeks ago I ordered Korean BBQ Street Tacos from a food truck menu and knew that I was going to have to recreate the meal at home! This is so easy, just a dump in the crock pot and go kind of meal!
WHAT YOU NEED
3 chicken breasts
1 jar of hoisin sauce
2/3 cup honey
2 tablespoons lemon juice
1/4 cup low sodium soy sauce
1/2 teaspoon ginger
flour or corn tortillas
Asian Vegetable Mix (or a slaw mix and green onions)
WHAT YOU DO
Mix the hoisin sauce, honey, soy sauce, lemon juice, and ginger.
Place chicken in the crockpot on low and cover with the mixture. Cook on low for 8 hours.
Shred the chicken and spoon the mix on to your tortilla and top with Asian slaw.
Enjoy!
So delicious!!! I served mine with carrot fries. I will be sharing that recipe next week! It would taste great over rice or with stir fry veggies as well! What meal have you re-created at home?
Another weekend has come and gone and another weekend passed me by without getting all the things done that I wanted to accomplish. Isn’t that always the way?
Friday for lunch, Laura and I checked out Shiki over in Homewood. We basically wanted to order one of everything off the menu and will be back soon, I am certain!
Saturday after the usual cleaning, I headed over to Salon 2000 to get a much needed cut and color. Several inches came off my hair and I went several shades darker. My hair looks so much healthier now!!!
After I came home, Chris and I did some planning on a few things and then we were off to Red Robin to have a quick drink and dinner. We tried to go to Crazy Horse first but they were super packed and we couldn’t even find parking anywhere. I am really disappointed that the Red Robin in Trussville stopped carrying craft beer. I ordered a sangria in protest, and to be honest…it wasn’t all that either. But the food was good, so I will give them that.
Sunday was spent meal planning, grocery shopping, food prepping and TV watching! I made Greek quinoa salad and veggie soup for lunches, paleo banana bread for breakfasts and last night we had paleo buffalo chicken pasta for dinner using spaghetti squash. It was delicious!!!

–Girls night with Laura, Morgan and Erin. We have had two babies enter the world since the last meet up a few months ago! We went to Melt and I had a sangria and the buffalo chicken salad.
–Talking with my husband Wednesday night. Most nights, we have a routine where we come home, I cook dinner and we watch TV and fall asleep on the couch. Hardly any conversation is had because we are both tired as fuck. Usually once a week…or every other week…we will just sit and talk for an hour or so and it is always fabulous. I never tired of hearing his ideas, frustrations, rants, praises, and everything in between.
–Laura and I checked out Cahaba Brewery’s new location in Avondale. It is so awesome!!! My favorite brewery in town for sure. The place looks amazing, the beer is delicious and they have ski ball. What more can you ask for??

Favorite Lust: I need to organize a few cabinet areas in our house and I have had my eyes on all kinds of organizers!

–I am turning *gulp* 33 this year and have been obsessed with everything anit-gaing lately. No one wants to look like an old hag, right??? Here are six things that anti-aging experts never do! I love the idea of facial Sundays and I might make that a thing!
–Shit is getting real over at Apple right now as they try to fight for democracy.
–Being tied to a desk all day isn’t all that great on our health. Here is a list of simple things you can change to make the most of your day.
–I took this quiz on what haircut you should get, and I got the haircut I plan on trying out this weekend!!! That’s right folks, big changes over here! I am both excited and nervous.

I promised many of you that I would share the recipes that I enjoyed on Whole 30. I wanted to call these healthy recipes and not Whole 30 recipes because they can be enjoyed by everyone! I am only sharing the ones that I have added to my regular rotation! There were a few recipes that I tried and didn’t care for so those wont be included.

Turkey Burgers – This is just ground turkey, onion powder, garlic powder, paprika and whatever else I felt like sprinkling in! I cooked it on the stove in a skillet with some olive oil for a few minutes on each side. I served this up with roasted potatoes which is olive oil, salt and Italian seasoning in the oven at 425 degrees for about 20-30 minutes. And don’t forget the ketchup!! (See next recipe)
Whole 30 Ketchup– This stuff is seriously legit you guys!!! Chris actually requested this several times with our turkey burgers even though he wasn’t Whole 30.
