Simple Banana Bread

So, I got a call from daycare on Monday afternoon that Zoe was running a high fever. Her teacher had joked with me that morning that her only goal for the week was to keep Zoe healthy for surgery Friday. Sigh. We were working on a three week streak, but all good things come to an end. One of the best things about working from home though, is I can make a delicious breakfast in the mornings! We had some squishy bananas left over from last week. Once a banana has a brown spot on the outside, I am like….yeah, no. Wont eat it. I figured I had to have most of the items on hand for a banana bread so I got to it!

What You Need

3 very ripe bananas

1/3 cup melted butter

Pinch of salt

1 tsp baking soda

1 large egg

3/4 cup sugar

1 tsp vanilla extract

1 and 1/2 cups flour

What You Do

–Preheat oven to 350 and line a bread pan with parchment paper (less clean up!)

–Mash bananas with a fork and stir in the butter.

–Mix in baking soda and salt.

–Stir in sugar, egg and vanilla extract.

–Mix in flour.

–Pour batter into pan and bake at 350 degrees between 50 minutes to an hour. It took mine right at 55 minutes.

    I looked on my doorstep this morning but the banana bread was not there. LOL. Man, this looks do delicious, like I could grab it through the screen!!! I love banana bread!

    That’s pretty much the recipe I use as well but sometimes I add chocolate chips to it just to give it a little something extra 🙂 Always so delicious! xo, Biana –BlovedBoston

    I somehow missed your post on Monday, but had to go back to see what was going on with your sweet girl! I hope this surgery will make her feel better, bless her heart! And thank you for sharing this recipe. I’ve never tried to make banana bread but I think I can handle this recipe!

    There are very few things I love more than a warm piece of banana bread with some butter melted on it. My mom used to make it quite often – and I still love it.
