Low Carb Peanut Butter Cookies

Chris and I are trying to be “good” for the most part, but it is nice to have a little sweet treat every now and then. If I can find a little way to make them “healthier,” then why  not? As long as it doesn’t take away on flavor. These peanut butter cookies deliver!!!

Now, I made this recipe based on the amount of peanut butter I had left in the jar, which was 3/4 of a cup. You want to proportion your coconut sugar to your peanut butter.  Basically if you want to do a cup of peanut butter, do a cup of palm sugar. Got me?

What You Need

3/4 cup peanut butter

3/4 cup coconut sugar

splash of vanilla extract (maybe 1/2 teaspoon??)

1 egg

What You Do

Preheat oven to 325 degrees and line cookie sheet with parchment paper

Mix all the ingredients in a bowl.

Drop into balls on cookie sheet

Press down at least twice with a fork

Bake 10 minutes

Let them sit on cookie sheet after you pull them out for a few more minutes to finish cooking

These cookies come out so soft and perfect!!!!

Weekend Shenanigans

I hope everyone had a fabulous weekend!! Can you believe we only have one more left in July. Crazy talk. This weekend, we didn’t really have any plans and it was more about just getting some stuff done around the house. Friday evening we went over to Chris’s parents house for a little bit to catch up.

Saturday morning I was out bright and early cutting the front yard. Man was it hot!!!! I am so ready for some fall weather. I am sure that wont arrive here until November or December. Ugh. Feels like 111. Mine as well be 511.

Chris was off to run some errands of his own; oil change, haircut, etc. Zoe and I went to Publix to pick up some items to snack on for the weekend. We decided to do some low carb stuff, so I got all the fixings for Italian subs, but made them roll ups instead! They were delicious!!!

Zoe decided that she wants to bypass crawling and start walking I think. Saturday she was sitting in her new little chair playing at the table and she pulled herself right on up and was standing. STOP GROWING SO FAST!!!

Sunday I cut the backyard, and then my sister came over with the boys to see Zoe for awhile. We also managed a trip to Target for groceries for the week. For dinner last night, I made my homemade lasagna with homemade sauce, except we replaced the noodles with zucchini to cut down on the carbs. It turned out really well!!! We also wanted a little snack, so we made some low carb, no flour peanut butter cookies!!! Recipes to come later 🙂

Oh and this also happened….

Since someone can pull themselves up, we decided to go ahead and lower the mattress all the way so we don’t have any accidents of her falling out of bed. Makes me so sad!!! I took the dust ruffle off after we lowered it too because it looked ridiculous puddled in a mess underneath. Next thing you know, the bars will be coming off the crib and we will be converting it to a toddler bed. Where did my 7 lb little wrinkly nugget go you guys?? Seriously???

It’s Monday. I got an invitation to a soft opening of a new restaurant for lunch today and decided to invite a few of my coworkers along and share my connections. We are all super excited! Later this week, I have an eye doctor appointment. Something that has been on my to do list for ohhhhh two years. Oopsy. Tell me I am not the only one to put that shit off? Friday Five

I was so sad to hear about Chester Bennington yesterday. It is a sad reminder that mental illness and addiction is a thing that people struggle with every day. It is also a reminder that mental illness knows no social status. It doesn’t care if you are incredibly famous or just a regular every day person. Linkin Park is one of my favorite bands and has been consistent over the years for me. Sharing one of my favorites from them. Can you believe In the End came out 17 years ago???

Zoe and I stopped by my neighbors consignment sale to look at toys yesterday afternoon. I wont buy used clothes, but I am all about a good deal on toys. We scored some great finds! I cleaned them up and we got straight to playing. I think Zoe likes them, what do you think? I got everything for less than the full price of the yellow chair.

Somehow I picked up a huge bolt in my tire Monday on my way home from work. You don’t really think about how different life is with a kid until you have to run a simple errand like getting your tire fixed. Ummm a seven month old does not want to sit at a tire place for hours waiting around. I have been putting it off all week, but I need to just get it over with. Sorry to anyone who is at the tire place today when we go. I apologize in advance.

Seven Months

This is a little late getting up, I took forever to get pictures this month since we were out of town on her actual 7 month birthday. It is crazy looking back on the previous months and see how much she has grown and changed. She used to be so tiny!!! These kids grow way to fast! This past month Zoe has gotten to go on her first vacation, and had a few other milestones.

Nicknames:Little Z, Z, Zoe Bear, Bear, Cheeks, Lovey, Little Miss, Booger Butt, Monkey, Zo-Zo

Loves: You are still chewing and sucking on anything and everything that you can put in your mouth. This month you have discovered the art of trying to pull up on things. You are still pretty wobbly, but gaining strength! Your favorite toys are your VTech walker, your apple with the worm that pops up, stacking cups and your shapes box.

Hates: You are not a fan of sitting in your car seat for long periods of time, you like to be out and seeing the world! Diaper changes have become increasingly hard, as you tend to be super wiggly and want to be anywhere but on that changing table. It sort of makes me a little sad, as one of your favorite places used to be that table. You would lay there forever babbling things and giggling to me.

Milestones: The biggest change this month was discovered a day before you turned 7 months, your first tooth!!!! And a few days later we noticed a second one popping up. They were the bottom middle two. You are sitting up unassisted much more sturdy these days. You have learned to climb up on me and items around the house, though you are pretty wobbly with that still. You are really close to sitting up from the laying down position without my help. You also started to go from a sitting to a laying position much more purposefully.

Clothing: For clothes you have a few 3-6 month pieces that you still fit in to, most of your stuff is 6 month or 6-9 months. You are starting to get too tall for most things that are less than 9 months.

Feeding/Sleeping: We are on the same schedule this  month as last month with your feedings and naps. While we were on vacation earlier this month, we pushed back your bedtime a little to prepare for when I return to the office full time. I hate the thought of only getting to see you a few awaken hours each day, so I had to add some more time! As far as solids go, you have tried so many! Sweet potatoes, squash, pumpkin, carrots, spinach, peas, green beans, pineapple, pears, apples, blueberries, bananas, mangos. You pretty much eat anything that we put in front of you. Except, sometimes you refuse green beans. Honestly, I wasn’t a fan of them until I was an adult and even now they have to be prepared right for me to eat them. So I can’t blame you there!

Looks: Your eyes and hair have stayed the same color this past month.

Things I want to remember from this month…

Your laugh has gotten harder and louder. There have been a few times when you have thrown your head back in a deep belly laugh, and the is the best sound in the entire world!!!

You have started giving deliberate hugs. Often times while I am carrying you in to your room for sleep, you squeeze me a little tighter and lay your head on my shoulder. It is the sweetest thing ever.

On your Vtech walker, there is a barn door that you can open and close. Anytime we open it, you immediately have to close it. You can’t stand to have it opened. It has been quite the fun game for daddy and I!

I will never forget how much fun you had riding in the wagon at the beach. You were all kinds of smiles and I really enjoyed our walks each night with it.

We have been doing  a lot of playing on the floor on a blanket these days. We just sit down together with a few toys spread around and have lots of fun.

How most of your communication is babbles and growls. The growls seriously crack me up!

Watching you try to crawl has been so cute. I know that you want to do it, you just haven’t figure out that you need to be up on all fours to do so. You lay there in a superman position with your arms stretched out and your legs stretched and off the ground a little and scoot and make all kinds of noises. I know it is just a matter of time before you take off!

Buffalo Chicken Salad

I prep our lunches for work on Sundays after the grocery shopping trip. Chris normally does lunch meat of some kind on lettuce wraps, or a salad with grilled chicken. He wanted something different to change it up, so enter Buffalo Chicken Salad! I adapted this from a few different recipes, and then made my own tweaks to it as well. Combining everything that he likes. This is super quick to throw together. Mainly because no one has time to cook chicken, I buy precooked rotisserie chickens and just shred them up!

What You Need

1 rotisserie chicken, shredded (you could cook 2-3 chicken breasts instead)

1/2 cup ranch dressing

1/4 cup hot sauce

2-3 stalks of celery, chopped

3 green onions

1/2 cup cheddar jack cheese

salt and pepper to taste

What You Do

Mix everything up in a container that you plan to store in refrigerator, less dishes less problems am I right? That’s it! This lasts all week. Chris likes it with the Flat Out Protein Up wraps.
